
It’s still cool to eat pumpkin in February right? Right! These pumpkin muffins are easy to make and would make the perfect snack any time of the day! Add a little whip cream and you’ve got yourself some dessert!

Pumpkin Protein Muffins
-1 C pumpkin puree
-3 scoops pumpkin spice protein (or vanilla!)
-1 C Krusteaz protein pancake mix
-2 tsp pumpkin pie spice
-1 tsp vanilla extract
-1 tsp baking powder
-1/4 C egg whites
-1/4 C brown sugar substitute
-1/4 C sugar substitute
Icing
-1/4 C powdered sugar substitute
-splash of almond milk
Preheat oven to 350. Combine all ingredients in a bowl. Pour into muffin tin. Bake for 12-15 minutes. For the protein powder, I used Level-1 pumpkin spice latte. For the sugar substitutes I used the brand Swerve! Once the muffins cool, mix together almond milk and powdered sugar for the icing! Store in the fridge.
Makes 11 muffins: 89 calories | 11g P, 9g C, 1g F

They are best enjoyed with a cup of coffee and heated in the microwave for 10 seconds! ENJOY 🙂
