
Hi there 🙂 I’ve got a break in my day so I thought I would write a quick blog post about what I have been up to over the last few days! My mornings are pretty repetitive and always start with coffee. On Sunday I woke up, drank my coffee, and taught Sunday school. After teaching I did a quick workout. Then my mom and I went on a few errands. I ended up getting a few pants and a sweater on sale at Target! Then we headed to the grocery store for dinner and snack supplies. We were both starving! When we got home we had a glass of Pinot Grigio and I made us a cheese, cracker, turkey, and popcorn snack plate!

A few hours later I decided to make some protein pumpkin muffins before making dinner! You can find this quick recipe HERE.

For dinner I made turkey meatloaf (using this recipe: click here), mashed sweet potatoes, and a brussels sprouts/apple/bacon dish. For the sweet potatoes I boiled 3 large sweet potatoes, drained the remaining water, and then blended the potatoes with 1/4 C brown sugar coffee cream, 2 T heavy cream, 2 T butter, pumpkin spice seasoning, and salt / pepper. They turned out AMAZING.

We also had rolls 🙂 Can’t go wrong with bread!

For lunch the next day at work I had leftover turkey meatloaf, spinach, and cottage cheese. I loved the turkey meatloaf and cottage cheese together!

When I got home from work on Monday I did a walk / run workout on the treadmill. YAY for endorphins!!!
For dinner that night we had pork tacos with Mexican rice and kiwi salsa. It was also Bachelor night so we all watched the Bachelor while eating popcorn and peanut M&Ms!! I used to not be the biggest fan of watching this show, but it’s more fun with a group 🙂

When I woke up this morning I made some coffee, did my devotional, and then an hour or so later I made a breakfast sandwich.

I also went on a long walk with Owen before settling into work!


It was fun exploring in the cold with my bestest pal!! When I got back I got started on work. Now I am enjoying some yogurt on this blogging break!! I hope you have the best day ever! Thanks for stopping by the blog today!
