Hi there! Happy Friday! I am LOVING this fall weather. It truly puts me in the BEST mood! This was my last official week of bed rest! I tried going to work last Friday and that was a big mistake…so I took it VERY easy this past week. I didn’t do anything strenuous and Leon drove me around places. I still can’t walk very far. Today I went to the grocery store and that was a huge struggle. I am still having major pain and inflammation internally around my incision site. Luckily, the incision looks great! If you have no idea what I am talking about you can read about my surgery HERE. I am going back to work tomorrow so wish me luck! 🙂
I have been starting every morning with a pumpkin muffin (recipe HERE), my coffee, and quiet time! Usually 30 mins to an hour later I made scrambled eggs to get some protein in.

I have pretty much just been hanging out on the couch every single day. I venture out to our front porch to read, drink coffee, and have snacks – just to help break up the day! Plus, its been so beautiful 🙂


I made a DELICIOUS turkey vegetable soup to eat alongside sourdough bread. We ate turkey veggie soup for daysss and then switched to turkey chili with cornbread for daysss. I LOVE making big batches of soup and chili to eat all week. I never really follow a recipe, I just throw in whatever sounds good. I will be better at writing things down because both the soup and the chili turned out too good for me not to be sharing!

I love snacking on something sweet in the afternoon with spice tea and a good book. We had been eating oatmeal pumpkin chocolate chip cookies for a few days using THIS recipe. They were DELICIOUS!


One night we had literally no food in the house so we had to get creative! We boiled broccoli in the pasta water, made some spaghetti, and chicken on the side. We also stirred in garlic, butter, and a carton of feta with the pasta so it would melt! It was super creamy and delicious! Sometimes random meals are the best meals! I promise thats chicken on the side and not potatoes. LOL.

I have successfully gotten through all of Gilmore Girls except the last episode. I’m a werido and don’t enjoy watching the last episode of things. I like to just pretend they are still in there own little world…I’m so odd. Besides watching Gilmore Girls, we watched Hocus Pocus, Halloweentown High ( a favorite!), and Practical Magic. I had never seen Hocus Pocus before and Leon wanted to watch it with me so we could watch the new one together. I gotta say…I wasn’t a fan of Hocus Pocus at all. I found it disturbing the witches “sucked the spirits” out of the children…that’s weird to me. So I am not super down to watch Hocus Pocus 2. Practical Magic was cute! I had never seen it. And anything Halloweentown is a favorite of mine! Side note: look at Owen! The dogs have been keeping me company every single day! I will miss them when I go back to work!

Leon brought us home Crumbl cookie one day…I was not a huge fan of these flavors. We didn’t even finish them! I am not sure what my favorite flavor is! I always just prefer homemade cookies… which is what I made today! 🙂

This before and after photo below makes me giggle! I literally took the picture and immediately the plate fell face first!!! I will tell you I salvaged the sandwich! The apples were too covered in dog hair. Look at Owen sneaking an apple in the back! My favorite tuna salad recipe is SO easy — carton of tuna, salt & pepper, big squirt of spicy brown mustard, 1 dill pickle chopped up! So simple, easy, and good!


I was very excited to receive a tasty, Kentucky made snack in the mail! Thank you Mingua Beef!! Leon quickly devoured these! I was barely able to sneak some bites in!


One afternoon I made sourdough cheddar and sage biscuits! I was so proud of myself! Most of my “standing up” or “moving around” time is just me baking / cooking and then laying on the couch with an ice pack.

The biscuits were easy and delicious! We drizzled honey over them.


We ate them alongside roasted butternut squash, brussels sprouts, and BBQ meatloaf 🙂 Hearty and comforting!

And today I made pumpkin spice chocolate chop cookies! Goodness, I love baking when the weather gets cooler! I am resting up with my ice pack now so that I can make my sourdough pizza crust tonight for Leon and I! He is picking up pumpkin beer on the way home too!!
