I cannot stop eating this sandwich. Like, I had it for lunch, dinner, lunch, and then dinner again. I almost ate it for breakfast both days too but you know I can’t give up my green smoothies.
This Avocado Salad Sandwich takes less than 4 minutes to throw together and tastes INCREDIBLE. It has simple, fresh, ingredients, and will leave you filling full thanks to those healthy fats from the avocado!
Easy Avocado Salad Sandwich
(serves 1 – easily made to feed however many you want!)
- 1/2 a small avocado
- 1/4 C sauerkraut (My favorite is Bubbies!)
- 1/4 small red onion, diced
- sprinkle of garlic, salt, and pepper
- 2 slices farm fresh tomato
- sprinkle of basil
- GF toasted bagel thin (I use O’Doughs!)
Pop that bagel thin in the toaster, combine all the ingredients (except the tomato and basil!), top the bagel thin with the avocado spread, and then top with tomato and a sprinkle of basil.
