Hello there! How are you?! Today is Labor Day and I took the day off work to “rest” in my own way. Resting for me looks like making a big to do list and checking things off throughout the day. It’s like I have a Type A personality or something?! I have successfully checked everything off my long list except write this blog post and put away laundry! So any who, here are a few of the things I have been up to the past few weeks…


I probably eat some variation of the meal above multiple times a week, every week. I can’t help it! It is just so easy and delicious. I usually just take ground turkey and mix it with salsa on the stove top. And then I do beans, rice or quinoa, lettuce, and guacamole with plantain chips! So simple and good. Plus, it makes the best leftovers!

Owen and I cruised on over to my parents house for my brothers birthday a few weeks ago! We celebrated him with cheeseburgers and chicken Alfredo…his favorites. Haha!


After work one afternoon Leon and I took our bikes to a trail by the river and biked all around. It was pretty peaceful and so much fun! I wasn’t expecting a shaded and paved trail.

When we got home I whipped up a quick dinner of roasted sweet potatoes and broccoli with a salmon burger and Tessemae’s ranch. This meal took less than 30 minutes to put together!!

One Friday I was really trying to pump myself up to workout but when I got off work I just couldn’t convince myself to follow through with it. And that’s OK! I had a drink on the front porch instead with Leon 🙂


I made us flatbread pizzas and roasted broccoli!

One morning I made pesto eggs with turkey pepperonis over a pieces of sourdough bread. THIS. WAS. GOOD! I had never made pesto eggs before but it was easy peasy. I just put a few tablespoons of pesto on the stove and then once it was hot I cracked an egg in the middle then added in some pepperonis!

I spent the rest of the day relaxing and then met my parents at the lake for a boat ride 🙂

Sweet baby Brooks likes to be held most of the time! I am also convinced my mother gets more beautiful with age.

There is nothing quite like being on the lake as the sunsets. This was such a wonderful way to end the weekend and start a new week!

A few random dinners we had last week included steak and a sweet potato one evening and then rice, a salmon burger, and an avocado on another evening.


Things have been really good at the cafe! I mostly just wanted to show you how pretty this smoothie bowl is 🙂 LOL!

A few nights ago I had really, really, really had to pee and I was super thirsty (the worst combo) but Owen was laying on my feet like this and I refused to move. Because LOOK HOW CUTE! I just love him so much.

Oh…what do you know…another bowl of rice, beans, and turkey… I can’t help it. It is SO GOOD!! I may finally be getting sick of eating this multiple times a week because I just couldn’t bring myself to eat the leftovers from this.

We had a really wonderful weekend this past weekend! Friday I had drinks with a dear friend and then my sister and parents came over for dinner and to talk around our little town. Then Saturday Leon’s parents surprised us with a visit! We had dinner at Longhorn and then watched Longmire 🙂 Sunday morning I was up early to read my bible and then we bought a new couch!!! I will have to have surgery in a few weeks and there was no way I could recover properly on the couch we did have…it was the WORST! So we took advantage of Labor Day sales and made a big adult purchase. We LOVE our couch now! 🙂


And here is Owen being beyond sweet again….

We spent the full day together. Just the two of us. I know people say the first year of marriage is the hardest but we haven’t experienced that just yet. I know there will be hard times but I am so thankful to be married to my best friend in the whole world! We finished our day with “pizza nachos” … waffle fries topped with meat, marinara, and cheese!! YUM!!!

I woke up this morning, spent time in the Word, made oatmeal, made a giant to-do list, and set off to check things off that list! And now I am about to check off “write blog post”! I hope you all have a wonderful week!! Thanks for stopping by the blog. I’ll be praying for you 🙂
