Good morning (or whatever time of day you are reading this!) and Happy Wednesday! I am currently sipping coffee at my parents house while it is raining outside and it is WONDERFUL. Does anyone else love slow and quiet mornings when it rains? The best. I have had a pretty eventful week so far…and it’s only Wednesday. But lettuce back this recap up to last Wednesday evening where I left off.
After work I came home, took Owen for another dog walk, and got to work on some internship things. I also made Banza chickpea pasta with pesto, arugula, and a O’Doughs gluten free bagel thin with some ghee on top.
Thursday morning I went on a long dog walk around my neighborhood (we usually do 3 miles) and then made this GOLDEN MYLK OATMEAL. Soooo freaking good.
Golden Mylk Oatmeal (serves 1)
-
1/3 C oats
-
1 tsp maple syrup
-
1 tsp ginger, cinnamon, turmeric
-
crack of black pepper (helps body absorb turmeric benefits)
-
1/2 banana
-
1 C coconut milk
Heat all ingredients over the stove until oats absorb liquid. Top with coconut cream, banana, almond butter, and a little granola.
I spent most of the day at work trying to get things done. I also met my sweetest friend Holly for coffee and to talk about Juice Plus+. So far I have been taking Juice Plus+ for 3 weeks now and I am LOVING it. I was having major bloating problems around 3 p.m. every day, my blood sugar levels would get super crazy around 11 a.m. if I didn’t eat lunch by then, and I was developing acne around my chin. Now? I don’t get bloated AT ALL! My blood sugar levels are just fine – which is crazy to me because I would ALWAYS get super shaky, panicky, dehydrated around 10:30 – 11:00 a.m. if I didn’t eat lunch right then and there. And, all the acne around my chin immediately cleared up within the first week.
What is Juice Plus+? It is a whole food juice powder concentrate of over 40 fruits and vegetables. I already lead a pretty healthy lifestyle but EVERYONE can always use more fruits and vegetables in their diet. Juice Plus+ is all about bridging the gap in our diet’s where we are lacking some serious nutrient deficiency.
Also, how cute is my mom? She bought this SAM’s Club size tub of dates for me. <3
For dinner that night I made a big bowl of kitchari+kale to eat while working on internship things. I always use this recipe (CLICK HERE) when making kitchari.
Friday morning I woke up to this sweet little baby face…
and coffee + coconut cream! Have you tried coconut cream? It is in a can in the Asian food aisle at the grocery store. It is creamy heavenliness.
I went to work for a little while on Friday but my mom and I were pretty beat from a tough week. The first two-weeks of the month is always mentally draining because there is so many invoices/statements that need to be paid. We decided to head home for lunch, nap, and spend the rest of the afternoon relaxing with my sister before church that evening.

After dropping my mom and sister off at my mom’s car, I headed to my house with Owen. I made a dinner of sweet potatoes, brussels sprouts, a kale/bean veggie burger, kimchi, and apples with cinnamon. I spent the rest of the evening watching Friends. Around 10 I headed to bed to fall asleep after reading a new book for an hour. Nothing like a relaxing Friday night!
Oh…and I had some popcorn and peanut butter M&M’s but I HAVE to tell you something. I am not even lying when I tell you this…Juice Plus+ has made me crave WAY LESS sugar. I used to be able to peanut butter M&M’s like it was my job!! But now? I could only eat 2 peanut butter M&M’s out of this bowl before I felt sick. I literally DO NOT crave sugar anymore!!!!
Now, I am not saying Juice Plus+ can do this for everyone, this is just how it has affected my body.
The next morning I woke up around 6:30 to get ready for a dog walk with my friend Shelby and her dog Wellington. I’m glad I got to see her because some friend-time and chats about life was just what I needed!
I came home, made more golden mylk oatmeal, coffee, and spent the morning reading Girl, Wash Your Face. Guys…this book is a game changer!! I am a big advocate for self-development books and you NEED to add this one to your reading list.
A couple of hours later I put on my favorite pancake tee and my mom and sister picked me up for a church meeting with the Ladies Society at our church.
After the meeting we all headed to White Squirrel for lunch. I had the Cashew Cranberry Salad and it was perfection!
After lunch we headed to sign the petition to make serving alcoholic drink to guests in your home legal, apparently it was legal in the “city” and illegal in the “county”. Who knows…but I signed it anyways! Plus, the petition stand was right outside Popworks and I grabbed a Peaches and Cream popsicle. It was also perfection!
My mom and sister dropped me back off at my house and I spent the rest of the evening reading, eating leftover from White Squirrel, watching Friends with my roommate, and relaxing with Owen.
Another good read to add to your list? Get Over Your Damn Self. So far I am LOVING this book.
I woke up Sunday morning, took Owen for a quick dog walk, headed the grocery to pick up supplies for the family I cook for every week, and got ready for church. After church I headed home to make a big ol’ green smoothie and go to work cooking!
But first…I obviously had to play with baby Owen!
After cooking I headed to my parents house and I couldn’t even contain my excitement because…..I AM GOING TO ITALY!!!!!!!
You guys….my dream has ALWAYS been Italy ever since I was a little girl and would watch Roman Holiday with Audrey Hepburn all the time. Italy holds such a special place in my heart and I have always felt like it was a place I needed to go. I have never felt closer to a place I have never been. And now I get to go next June!!! Graduation better hurry up and get here. I have already been practicing my Italian!

After spending some time with my family, I headed home to eat this sweet potato, ground turkey, spinach, and pepper concoction.

I spent the rest of the evening reading and hanging with my favorite guy…Owen! 🙂


Monday morning I woke up…and realized I had ZERO coffee/creamer/breakfast food in the house. So after my dog walk I got ready quickly and booked it over to Spencer’s coffee for coffee and a yogurt parfait.

The rest of Monday evening was spent eating the best salmon and rice dish and hanging out with my family before heading back to my house.

Tuesday morning I got up early for a run at a local park with Owen. 3 miles done with my favorite guy. 🐶 I remember I used to HATE running because I always felt like I had to, whether that be for school or to be “fit” or “skinny”. After so much time off, walking instead, & no longer comparing myself to anyone else – my relationship with running & MY body has totally changed. Now I wake up & decide what I want to do – and today I wanted to run with my best friend. 💖

I headed to the grocery after our run to get my coffee and creamer and then got ready for work. So… something scary and awful happened when I got back home. I noticed Owen’s eyes started to sink in. Like, there were actual dents next to his eyes I could poke my the top of my finger through. Then not even 10 minutes later, his whole snout became puffy and started turning bright pink, his eyes became incredibly red, the rims of his eyes became red, and he started forming legions under his eyes. The legions immediately started to bleed and by this point I am freaking out and thinking he is dying. I called the vet and luckily they had an opening first thing that morning. I picked up Owen, strapped him in his seatbelt (lol) and rushed with my dripping wet hair (I had just showered!!) to the vet. The symptoms came on so quickly I didn’t know what to think. Luckily my mom told me to give him a Benadryl before we left which helped a little. I was practically sobbing in the vet’s office waiting for the vet to get in and look at Owen. They aren’t for sure what caused it but they think it may have been an insect bite on our run. They said they would keep him for observation while I went to work. I have never been so scared…it was like my only child was sick!! But, I went into work anyways to distract myself.
For lunch I had a quinoa/vegetable/pesto dish (leftovers from the family I cook for) and some unpictured plantain chips.

I called in around 1:30 and the vet told me he was good to go and to give him Benadryl as needed. I picked up my sweet little boy and we headed to my parents house for lots of snuggles!!!
I also snacked on my favorite apple nachos – 1 apple sliced, cinnamon, 1 T pb melted!

Danica and I hung out for a few hours before heading to dinner with my friend Hannah and her sister Sydney!

I ordered the Taco Loco with shrimp and no cheese!

My sister and I ended the night with ice cream (for her) and nice cream (for me – blended frozen banana and cocoa powder!) while watching a Kardashian’s marathon. I love sister nights! I’ll miss her when she heads off to the college dorms…I am making her hang out with my on campus though.
