
I haven’t had sloppy joe in a LONG time! I remember Leon mentioned it to me once to make for dinner! I decided to resurrect an old favorite from our childhoods but I revamped it a little with added veggies! Enjoy 🙂


Veggie-Packed Sloppy Joe
Not your momma's sloppy joe – this sloppy joe is packed with peppers and mushrooms to not only add volume, but add extra nutrients!
Ingredients
- 1 lb grass fed beef
- 1 tbsp olive oil
- 1 tbsp minced garlic
- 1 C frozen onion & pepper mix
- 1 carton bella mushrooms
- 1 C tomato sauce
- 1 6-oz tomato paste
- 1/3 C water
- 1/3 C unsweetened ketchup
- 3 tsp Worcestershire sauce
- 2 tsp Italian seasoning
- 1 tsp paprika
- 1 tsp cumin
- sea salt & pepper
Instructions
- Over medium-heat sauté ground beef with sea salt and pepper until cooked through, drain excess oil. Pulse mushrooms, onions, and peppers in a food chopper. Add oil and garlic to pan. Add in chopped mushroom/pepper mix. Add a bit of sea salt and pepper. Add beef back in. Combine tomato sauce, tomato paste, water, ketchup, and Worcestershire sauce in a small bowl. Mix together. Add in tomato mixture into the beef/veggie mixture. Add Italian seasoning, paprika, and cumin. Stir together. Add in more sea salt and pepper. Taste test!! Cook on low-heat for 10 minutes. Serve with your favorite sides!
