Happy Sunday! How are you?

Me? I’ve been okay. Work stress is overwhelming these days so I am finding ways to cope that make me happy. I spent most of the weekend hanging out with one of my favorite friends who always cheers me up! After getting a workout in and some errands done, I headed to my parents house because they always cheer me up too!

You know what else cheers me up? Baking and blogging! I looked through a few of my favorite blogs and came across a pop tart recipe at Kale Junkie. I adapted the recipe a little and decided to make the pop tart Fall-themed since I can’t wait for Fall!
If you’ve got a craving for pumpkin, this recipe will do the trick! 🙂

Pumpkin Pop Tart w/ PB Protein Frosting(for 1!)
6 T all purpose flour
4 tsp olive oil
4 tsp water
1/2 tsp maple syrup
3 T pumpkin
1 T maple syrup
1/2 tsp cinnamon
2 T vanilla protein powder
1 tsp vanilla almond milk
1 tsp peanut butter
Preheat oven to 350. Mix together flour, oil, water, and syrup into a bowl. Form into a ball. Roll flat on to a baking sheet. Mix together pumpkin, syrup, and cinnamon. Add to half of dough. Fold dough over. Press sides down with a fork. Bake for 20 mins. Mix together protein powder, milk, and peanut butter. Add to finished pop tart. Enjoy with a hot cup of coffee!
