It’s a Saturday evening and I’m glued to the couch watching Schitt’s Creek. I will miss these slow summer days! I did an extremely exhausting workout today that has me staying close to the couch. I’m surprised I even got up to make this dinner! But good news…this dinner requires minimal effort.This recipe can also be easily multiplied to serve how every many people you need.
I usually roast my brussel sprouts but I decided to try out the air fryer! They turned out incredibly crispy and flavorful. I’m excited to try out other vegetables in the air fryer!
Air Fryer Bacon Brussels Spouts & Sesame Lime Salmon
Bacon Brussels Sprouts
- 1.5 pounds brussels sprouts, halved
- 5 pieces hickory smoked bacon, chopped
- 1/4 C olive oil
- juice of one lime
- 1 T minced garlic
- salt and pepper to taste
Sesame Lime Salmon
- 1 filet Alaskan Sockeye Salmon (or more if you aren’t just eating alone 🙂 )
- 1 T olive oil
- 1 tsp coconut aminos
- juice of half a lime
- 1 tsp minced garlic
- 1 tsp sesame seeds
- salt and pepper to taste
Coat the brussels sprouts in olive oil, lime, garlic, salt and pepper. Place in the air fryer at 380 degrees for 30 minutes. Toss every 5 minutes to evenly cook brussels sprouts. During the last 10 minutes, add in chopped bacon. While the brussels spouts are cooking, coat the salmon in oil, aminos, lime, garlic, salt and pepper. Place in the oven on high broil for 10 – 15 minutes – depending on how cooked you like your salmon.
Once everything is done – you can add it all over a bed of arugula!
