Easy Roasted Veggies – carrots, sweet potatoes, & broccoli

I had a few people message me about exactly how I made these vegetables – so I thought I would do a quick post on them! 🙂

Roasting vegetables is my absolute favorite way to eat them! Plus, it is super easy!

Here is what you need:

  • 3 small sweet potatoes
  • 2 broccoli florets
  • 1 small bag of baby carrots
  • 2 cans organic chickpeas
  • sea salt, pepper, garlic, cinnamon
  • olive oil
  • tamari

Here is what you do:

  1. Preheat the oven to 400
  2. Drizzle the carrots with olive oil
  3. Season with sea salt, pepper, & garlic
  4. Drain chickpeas
  5. Drizzle chickpeas & broccoli with olive oil & tamari
  6. Season with sea salt, pepper, & garlic
  7. Scrub sweet potatoes
  8. Dice sweet potatoes in small bites
  9. Drizzle with olive oil
  10. Season with sea salt, pepper, garlic, & cinnamon.

Roast everything for 45 – 60 minutes (or you can poke a fork through the vegetables!)

Enjoy with chicken, turkey burgers, veggie burger – or eat them on their own! ❤
