ok. t-minus 4 days until i marry the love of my life. but like, who is counting, ya know? ME! I’M COUNTING! I can’t freakin wait. This wedding process has been very low-key since we are doing a small wedding with family only. For someone who is proudly maintenance, this wedding has been surprisingly not high-maintenance. Leon and I just want to be married. I don’t care about the small details since I have a cafe opening that requires attention to the small details. I just want to be married to my best friend and eat really amazing food <3



Speaking of the cafe – it is opening S O O N!! Can’t even believe. I will do a big blog post one day with all the changes compiled together. It is truly crazy the before and after photos! It’s been so crazy to see this place transformed.

Random, but my mom got me this amazing shirt I wear all the time!! I call Owen “yogi Owen bear” or “yogi” all the time! I don’t know why! But this shirt says “this girl loves her yogi bear”! It’s perfect!!

Also random, but I felt very Shania Twain in this denim on denim. Leon has this denim jacket that I steal a lot. I discovered it recently in his section of clothes – there’s no chance he is getting this back LOL.


I have been really loving half a bagel for breakfast each morning with peanut butter on it. Leon recently told me he loved bagels and cream cheese for breakfast (why I didn’t know this already, I will never know!) so we got him some! I discovered that I really enjoy bagels too, so that has been a nice change up from eating oatmeal every morning.


I went to Aldi for groceries last week and stocked up on so many goodies! I always forget how much I love that place. I wish we lived closer to it! I picked up a big bag of tilapia to have for quick dinners. I didn’t realize how much I loved this simple fish. I add a little olive oil, lemon, and paleo seasoning and bake for 15 mins at 400. I also finally nailed good quinoa! This is something I struggle to make taste good. I did 1/2 C quinoa, 1 C chicken bone broth, zesty garlic seasoning from Trader Joes, and the juice of half a lemon. SUPER tasty!

I have eaten more tilapia than I would care to admit…LOL. It is just so easy and packed with protein!


Leon and I celebrated Valentine’s Day on Saturday night and it was PERFECT! He even got me a beautiful bouquet of flowers! Leon made the PERFECT steak. There are few things I love more than a meal at our table with my favorite person.

Who else in Kentucky has been LOVING the sunshine?! It makes me so happy! I love winter but I am very ready for Spring and all the sunny days ahead!

I switched things up from tilapia to salmon one night – it turned out really good too π

On actual Valentine’s Day I started the day with a yogurt parfait before heading into town to make some decisions on the cafe.

My parents got me this cookie and a coffee π When I got home, Leon had surprised me with more beautiful flowers, chocolate, and a card. I know Valentine’s Day is cheesy for some, but not for me. I love Valentine’s Day.
I can’t believe this is my last post as a single woman! You all have really been with me through all the ups and downs over the years. From breakups, to dud dates, to me meeting my husband! I can’t even believe it!!!! I am so thankful for this man God has placed in my life. I will talk to you all soon when I am Mrs. Pendley π
