Happy Saturday! I am up bright and early with coffee in hand and an Iced Gingerbread Clif Bar ready to blog! Have you tried the Iced Gingerbread Clif Bars??? Listen, I use to steer clear of Clif Bars because I knew they were high in sugar and carbs, blah blah blahhhh. But guess what? I have been challenging all food fears I use to have this year and man am I feeling good! You already know 2018 was a big year for me and this is just another thing to add to the list 🙂

Anyways…I know you are here for the pasta! And man, oh, man is this pasta GOOD.
Bonus? It’s simple, quick, filling, and easy to make! Lettuce get to it —
6-Minute Chickpea Pesto Pasta w/ Brussels Sprouts
Serves 1 – but its easy to make more!
- 1/2 C chickpea pasta (I used Banza)
- 1 T green pesto
- 1 T olive oil
- 1 bag steamable brussels sprouts
- salt & garlic powder to taste
Cook pasta according to package, throw those brussels in the microwave for 5 minutes, remove pasta from heat & drain water once cooked, add in pesto, olive oil, brussels sprouts, and sprinkle with salt and garlic powder. BOOM – Done!
Also, you should eat it with sourdough bread because you can never have enough carbs, ya know?
