This salad. I don’t even know if you can call it a salad because it has 2 or 3 ingredients. But is so good! And it is so simple!
After a tough Crossfit workout (rowing 2000m omg) I decided to go to the grocery store and when I saw grass-fed bison was on sale I immediately started craving it. I had also picked up a kale salad kit that was sale.
We had some leftover roasted sweet potatoes on sale that I added in but you don’t have to do that. I ate the bison and kale together without the potatoes and it was just as flavorful on its own!
Bison and Kale Salad {Paleo/GF} [Serves 4]
- 1 lb (12oz) grass-fed, organic ground bison (I used Simple Truth from Kroger)
- 1 tsp salt
- 1/2 tsp pepper
- 1 T dried parsley
- 5 cups chopped kale (or 1 bag of kale salad mix)
- 1 T spicy brown mustard
- 1 T coconut aminos (or soy sauce or tamari)
Brown bison in a cast iron skillet. Add in salt, pepper, parsley half way through the cooking of bison. Transfer cooked bison to a bowl. Add chopped kale to the leftover grease in the skillet. Add in mustard and coconut aminos. Cook until kale is wilted. Add bison back in and cook for a few more minutes while they flavors combine.
Pair with sweet potatoes, gluten-free crackers, bread, whatever!
