So I am totally obsessed with bloggers/food bloggers. I like to peak inside the lives of others (creepy?) and I think it is so cool that there are people who are just as obsessed with food as I am. If you search “WIAW” into Google, you will find hundreds of blogs that let you peak into their days of healthy eating.
With that, here is my WIAW…but really it is “What I Ate for Breakfast Wednesday and What I Ate For Lunch and Dinner Tuesday”
I made a big batch of buckwheat pancakes to eat throughout the week on Monday. This was Hodgson Mills Buckwheat Pancakes with Dark Chocolate Peanut Butter, half a banana, cinnamon, maple syrup, and coffee with a little too much creamer. (Sorrynotsorry)
I normally have a morning snack but the pancakes are super filling and keep me satiated. This lunch included a leftover salmon burger from Sunday, grilled squash, and chickpeas all over a bed of spinach.
Again, I usually have a snack in the afternoon but I knew I was going on a run so I didn’t want anything to be hard on my stomach so dinner was eaten early that night. I had sautéed kale and mushrooms in avocado oil, 3 eggs with oregano and basil, 1/4 an avocado and a sprinkle of parmesan cheese because #fats. I also had two slices of sprouted bread. I’ll talk more about all the benefits of “sprouted” foods in a another post soon.
Also, my CUTEST siblings came over to visit me with their dinner.
Seriously, this made my heart so happy. I just love them.
Annndddd the most important meal of the day….
A couple HUGE spoonfuls of this deliciousness.
