Hi friends! Happy Thursday! After many requests – I present to you my:
Darn Good Veggie Soup
This recipe was whipped up in my head and made out of the love in my heart…too cheesy? Okay.
Here you go!
Darn Good Veggie Soup
- 4 C vegetable broth
- 1 28 oz. can Whole Red Tomatoes
- 1 frozen bag chopped spinach
- 1 bag frozen mixed corn, peas, carrots
- 1 bag frozen riced cauliflower
- 2 bags frozen cubed sweet potatoes
- 1 bag frozen onion, pepper blend
- 2 T minced garlic
- 2 T olive oil
- 1 tsp rosemary
- 1 tsp oregano
- 1 tsp thyme
- 1 tsp basil
- 1 tsp celery seed
- 2 tsp celery salt
- 2 tsp Italian seasoning
- 1/2 C nutritional yeast (optional)
- LOTS of sea salt and pepper…like, just keep salting this thing.
In a large soup pot, head olive oil and garlic on medium heat. Once garlic browns, add in bag of frozen onions and peppers. Once onions and peppers thaw, add in the rest of the frozen vegetable bags (except the spinach!), add in vegetable broth, puree can of tomatoes until chunky, add in tomatoes with the juice from the can, add in all of the seasoning, let simmer on medium heat for 20 minutes. Once sweet potatoes are cooked through (those will take the longest to cook through!), add in bag of spinach, cover soup. Once spinach has thawed – stir in nutritional yeast, let simmer on low heat for 10 minutes.
REMEBER: Keep taste testing! You always need more salt than you think. 🙂
