Hi everyone! How are you? I hope you enjoyed a wonderful Memorial Day weekend and were able to not only relax, but take the time to remember those who have served and died for our country.
Let’s pick things up where we left off last week. When I got home from work my new Erin Condren planner was waiting for me at my doorstep. I was so excited about this! I have a lot going on in my life lately and I needed a planner that would allow me plenty of room to write things down and stay organized. Plus, it’s super cute!
On Thursday morning, I woke up and completed a tough workout followed by some coffee and farm fresh eggs.
When I got to work I immediately started diffusing “Gratitude”. There has been a lot going on in my life lately and a lot of changes on the horizon. After having a long talk with my dad, I have been trying to focus more on what truly makes me happy and what passions drive my heart.
Since I had only eaten eggs so far, I snacked on an immunity boost, green juice, and had a few bites a Rawnola bar from the local juice shop in town. Also, how gorgeous are these flowers?
I forgot to pack a lunch so I walked over to a local coffee shop and grabbed a California Club while I restocked the cold brew jugs for my work. This sandwich was delicious! I don’t usually eat sandwiches very often but lately I have been craving them.
When I got off work I went to see my friend Shelby at The House of Harper to get my eyebrows done and my hair trimmed. I also needed some girl chat and life advice and Shelby is perfect at that!
Once I got home it was already 7:30 and I was STARVING. My parents had cooked these chicken taco things but instead of a flour shell I threw the toppings on some romaine lettuce and called it a salad. Perfection!
Friday morning I woke up bright and early to take my sweet little Owen for a walk around the neighborhood.
When I got home I had 2 slices of turkey bacon, 1 egg, and a yogurt parfait, plus lots of coffee.
I got ready for work and wore my favorite pancake shirt to cheer me up.
Around noon I cracked open my salad of tuna, romaine, croutons, chow mien noodles, tomatoes, cucumber, and greek dressing.
Friday night I hosted a little pizza party movie night for my Sunday school group. We watched The Incredibles, ate cheese pizza, and made ice cream sundae’s. It was so much fun! They each got me a little gift too, so sweet. <3
After the movie night I met my family and another family at Novo Dolce for some late night drinks and appetizers. That’s right, I ate pizza, ice cream, alcohol, and french fries all in one night. You only live once!
However, after a night of indulging I was more than ready for some exercise Saturday morning. I woke up early, fit in 3 miles, and then took Owen for a 2 mile walk. It was such a therapeutic morning!
When I got home I made some coffee and enjoyed a yogurt parfait.
The rest of Saturday was spent in Nashville taking care of about 10 little girls. A woman from church was hosting a baby shower for her sister-in-law and needed help keeping track of all the little kiddos coming.
When I finally got home I was worn out! For dinner I had some bread, a turkey burger, cole slaw, and a few potatoes. So delicious!
The night ended with popcorn, M&M’s, and a new-to-me show called “Queen of the South”. Have you heard of it? My family and I are addicted now.
I honestly can not tell you what I did Sunday. I know I definitely went to Barnes and Noble to get a few books but that’s it. I don’t remember what I ate or anything. #bloggerfail
I do remember Monday though! I woke up around 6, let Owen out, and then had a tough workout at the gym. When I got home I made my parents and I a nice big breakfast to enjoy on the back porch.

After breakfast I met Shelby and her dog Wellington at the park for a quick dog walk! I love hanging out with her and I am so glad we are friends!!
Once I got home and took a long shower, I put on my comfiest sweats and worked on some internship things. I love that Owen follows me wherever I go!
P.S. is there anything better than wearing no makeup and large sweatshirts? Nope.
I also made some Paleo brownies to enjoy with our Memorial Day cookout!

Memorial Day dinner: Chicken sausage, banana peppers, LOTS of fruits, Mom’s homemade BOMB potato salad, and mac n’ cheese. So good! The only thing missing was baked beans.
Thank you to all those who have served our Country. You will never be forgotten!

Tuesday morning I woke up, realized I had ZERO workout clothes clean and decided to skip the gym and enjoy a lazy breakfast instead. Cereal and eggs! I get cravings for cereal very once in a while and I’ve learned not to ignore my body. Bring on the Cheerios!

For lunch I made a giant salad with spring mix, carrots, chicken, croutons, tomatoes, and Italian dressing.

Once I got home from work I enjoyed a big bowl of chicken soup and a sandwich while watching The Bachelorette with my sister. Every time I say I won’t get wrapped up in that show, I end up watching it anyways.
