Happy Memorial Day!
I am so thankful for all the men and women who have died for our country. I also want to take a moment to say thank you to all the men and women who are currently serving the United States. We are so blessed to live in a free country!
My day is going wonderful so far. I started out the morning with a tough workout followed by a breakfast I cooked up for my parents and I. After enjoying coffee and breakfast on the back porch I met up with my friend Shelby and her sweet pup for a walk.
When I got home I scrubbed the bathroom, the kitchen, and even gave Owen a bath. Ah, how I love when things are clean. After I finally took a shower I whipped up some paleo brownies to enjoy alongside our cookout tonight.
These brownies are dense, fudgey, and don’t leave you with that slightly sick feeling most sweets give you thanks to the low sugar.
Paleo Brownies (GF & Low Sugar)
Makes 1 8×8 pan
- 1/4 C coconut oil, melted
- 2 eggs
- 1/4 C maple syrup
- 1 tsp vanilla extract
- 1/4 C coconut sugar
- 1/4 C almond butter, melted
- 1/2 C Bob’s Red Mill Paleo Flour
- 1/2 C cocoa powder, special dark
- 1/4 tsp salt
- 1/2 dark chocolate bar, chopped
Preheat the oven to 350 degrees. Melt the coconut oil and almond butter. Add in eggs, maple syrups, vanilla, and coconut sugar to coconut oil and almond butter. In a separate bowl mix together the paleo flour, cocoa powder, and salt. Mix the two bowls together. The mixture will be thick. Pour in a greased 8×8 pan and top with chopped dark chocolate bar. Bake for 15-20 minutes.
