The days sure are getting colder and what better way to warm up then a bowl of chili? Turkey chili that is.
The other day I told my mom I had a craving for chili and boy did she crush my craving! We were out of beef at home and she didn’t feel like going to the grocery store so she came up with this recipe with the ingredients we had on hand and it is DELICIOUS! I love when you just whip up something and it turns out wonderful.
My mom is graciously letting me share the recipe on the blog today so I hope you enjoy! This chili is super easy to make and serves 6 generously!

Mom’s Healthy Turkey Chili
Serves 6
Ingredients
- 2 lbs ground turkey
- 1/2 bag frozen 3 pepper and onion blend
- 1/2 bag riced cauliflower
- 1/2 bag frozen corn
- 2 Tbsp minced garlic
- 2 Tbsp olive oil
- 1 32oz. chicken broth
- 1 can cannellini beans, rinsed and drained
- 1 8oz. can tomato sauce
- 1 6oz. can tomato paste
- 1 Tbsp cumin
- 2 Tbsp chili powder
- 2 tsp onion powder
- 1 tsp celery salt
- salt and pepper
- arugula, organic cheese, organic corn chips (optional)
Steps
- brown the turkey in a pan, add generous amounts of salt and pepper
- once turkey is browned, add in frozen onion & pepper blend
- in a separate stock pot, saute garlic and olive oil
- add in turkey, onion & pepper blend
- add in riced cauliflower, corn, cannellini beans, chicken broth, tomato sauce, tomato paste, and spices
- cook over low – medium heat for several hours (the longer it cooks, the better the flavors blend!)
- top with raw, organic, cheese & organic corn tortilla strips, and arugula
