Hiya friends! It’s been a minute 🙂 I wanted to pop on the blog today to give a little recap of what I have been up to lately. I am officially on summer break and it’s been glorious. I have managed to plow through lots of books already so that’s always nice!

Lettuce take this recap back to a few weekends ago. Leon took me on a fun date to one of our favorite places, Pub! I was holding up my purse like this because his parents gave me this purse 🙂 It belonged to Leon’s grandmother and I feel honored to be able to have it and wear it!

We ordered the mixed grill for two but I swear it should say it can feed 8! We made a good sized dent but I think Leon ate french fries for 4 days after this…LOL.

We stopped by my parents house and ate a s’more by the fire 🙂
We ended our night watching our show snuggled up with our dogs. I opened the pantry to find this message…

I am a lucky gal!! Leon knows one of my favorite things ever is popcorn and m&ms!

Saturday before Mother’s Day was spent hanging out with my family.
If there’s one thing my mother always has in her house, it’s ingredients to make chocolate chip cookies. In fact, she says it’s one of the many secrets to a lasting marriage. I can agree since my parents have a rockstar marriage that I admire daily. Chocolate chip cookies will always make me think of my mom. She has always let us eat the cookie dough and I have always really appreciated that about her. She’s not a regular mom. She’s a cool mom. You deserve to be celebrated everyday mom – therefore I’m proposing we make chocolate chip cookies everyday. You in? Okay, cool.
Sunday morning was Mother’s Day so I sat on the front porch and drank coffee with my sweet momma. Then I made her a breakfast! We had blueberry muffins, eggs, bacon, and fresh fruit.


For Mother’s Day dinner I made my mom chicken parm, salad, bread, and roasted broccoli. We all got very emotional sitting around the table and talking about my mom. She’s pretty darn amazing and my siblings and I are blessed to have her as a mother!


The night ended with Paleomg’s Apple Crumb Cheesecake that was INSANELY good!!

One morning last week Leon made me breakfast before work! He made me pancakes, bacon, and eggs! He spoils me forreal!!

For lunch I had a turkey wrap with carrots and pineapple. Is pineapple in season or something because lately it’s been so delicious!! Like more delicious than usual.

For dinner one night I made Leon and I tortilla pizzas with turkey pepperonis and pineapple. This is one of our favorite easy dinners!

I tried recording a podcast one day last week but it just didn’t turn out like I wanted it to so I am putting it off until I have the energy to re-record.

One night for dinner I made my family salmon and roasted veggies to go with some leftover rice. The salmon turned out great!! I soaked the salmon in 1/4 C olive oil, 1/4 C orange juice, 2 T @swervesweetie brown sugar, 1 T tamari, juice of 1 lime, crack of pepper! Bake at 400 degrees for 20 minutes. Use a deep dish pan because you want all those juices to cook together with the salmon!

Friday night I went out to eat with a friend after I worked out!! We had margaritas and Mexican food. It was so much fun!

When I got back home I loaded up in the car with my family to get some ice cream 🙂 My mom get more and more beautiful with age!!
I was loving the nutter butter flavor. It was heavenly!

Saturday we spent time with Leon’s family. We always have the best time when we are there!! I wish we lived closer to them!
For breakfast on Sunday I had yogurt and peanut butter & banana toast. Simple and delicious!

And then I waited for Leon to pick me up 🙂

I spent the rest of Sunday reading, going on a walk with Leon and our dogs, and snuggling up together to watch our show.

Today I had work and I was pretty pumped about the water bottles that came in for our employee wellness program!


When I got home from work today I snuggled Owen and then decided to workout out! I just finished my workout and now I am off to finish working for the day!! I hope you all have a wonderful week. Thanks for stopping by the blog today!
