Hello there and Happy November! π

This week was a GOOD ONE! While work was its usual busy and stressful self, everything else in my life is so wonderful that it makes up for the work chaos. Lettuce take this recap back to last Monday, shall we? My day started off right because I had this jar of goodness waiting on my desk for me!! Thanks EVY! π This is my favorite candy combo! It made my whole week!!!
After work I headed out to run 3 miles with Owen! We enjoyed the crisp Fall air! After our run, I made an apple / chickpea / quinoa salad with salmon. I always forget how much I love salmon until I eat it again and then I think to myself “why don’t I eat this more often?” …and then I forget again! LOL

I repurposed the salmon the next day by adding it to the quinoa / sweet potato bowl at Spencer’s. I don’t know how they make that dressing but it is SO GOOD.

Wednesday morning I stayed home to do midterms all day. I started the day with 2 chocolate kodiak cake waffles with PB & syrup – plus a side of eggs with cheese and bacon bits. So darn tasty!

After I got a massage (thank you wonderful coworkers for the gift certificate!!!), I picked up ingredients for chicken tortilla soup and quesadillas. It had been raining all day so it was perfect soup weather!
I ate soup leftovers for lunch and dinner the next day too! π

I have also been loving little protein bites after my workouts and oatmeal in the mornings!

I like starting my mornings with one of these little protein balls alongside my coffee too. They hold me over until I eat breakfast a few hours later.
We were going to spend the weekend with his family so I spent Friday evening making goody bags for his niece and nephews! We also finally went to Jackson’s Orchard and had a fried apple pie! I also sipped on hot cider. It was worth the wait!!

Saturday morning I was up bright and early to take Owen to my parents for the weekend. They are true gems for watching him while I went to Madisonville π

We spent all of Halloween with his family and it was truly a wonderful day. The weather could not have been more perfect. I know COVID is still a big thing but it was super cool to see so many families out enjoying the weather and trick or treating.

I fell asleep early Saturday night! I was exhausted! I was up early Sunday though to enjoy coffee and some sunshine with his family. We headed to his aunt’s house to pick up a few things and we got to feed the animals.

It was so peaceful and perfect out there – I would move to the country in a heartbeat.

This is THOR!!!! He’s crazy. Haha!

We got back around 4 and decided on an early dinner! I picked up Owen and ingredients for skillet enchiladas. We used peppers from his Aunt’s farm π I will have to remake this recipe and photograph it because it was SO GOOD and so simple to make! Plus, it was packed with vegetables.
Well friends, I’ve got a homemade chex mix in the oven and the place is smelling fantastic! It’s barely 8:00 pm and I can barely keep my eyes open. Until next time π I hope you had a wonderful Halloween!!
