
Happy Sunday! It’s currently 7:00 AM and I am snuggled up on my parents couch with a cup of coffee and a huge blanket…perfection! It’s been a pretty uneventful week, but a good one! So lettuce get to it π

I have been on an oatmeal kick! The one above is oats, cinnamon apples, apple butter, flax seed, and peanut butter. So darn tasty!

Monday Owen and I went on our first 3 mile run together for the first time in forever! It felt so good. When I was stressed at work about a month ago my energy levels were super depleted and I didn’t want to work out at all. Now, even though work is still stressful, my energy levels are awesome so I am able to run to alleviate some stress!

When I finished my run and cooled down, I made chicken salads and cheesy, broccoli rice for us to enjoy for dinner!
Tuesday night I made us shitty pumpkin pancakes but a DELICIOUS sausage and vegetable egg bake. I always slice sweet potatoes thin to use as the crust. You can find a similar recipe I have made HERE, HERE, & HERE. Side note: it is so FUNNY to see my food picture progression. Some of my older photos make me cringe. LOL.
Wednesday, our favorite guy scored an A on one of his nursing exams. So we took the night to celebrate! First, we took the dogs to the dog park! The weather was beautiful! Then we went out to eat for the first time in forever. We enjoyed Moscow Mules, loaded BBQ tots, and I hate some of a salmon Caesar salad.

Thursday morning I had blueberry, flax, and PB oatmeal…no surprise π I usually bring my oatmeal to eat at work!

For lunch I had leftover egg casserole and a chocolate PB Kodiak protein waffle.

We all have been loving pita pizzas! This one is Hawaiian BBQ chicken with mozzarella cheese.

Friday night I went to my parents house to spend the weekend with them! My mom made a yummy chicken dish with salad eaten alongside sweet potato chips, salsa, and guacamole.

Saturday morning I woke up early to take Owen on a quick 3 mile run! Then I had to book it to pick up Chick Fil A for my staff and work for a few hours! I stayed at work until around 2:20 and immediately made coffee when I got home.
The rest of Saturday was spent drinking coffee, watching a TV show with my mom and sister, napping on the couch, and eating veggie soup with my mom’s homemade bread! All in all, a wonderful Saturday. Owen was more than ready for bed by 9:30 π
