Well, helllloooo there! I am currently cozied up on the back porch with coffee and a bowl of popcorn, candy corn, and peanuts. Now that I’m all settled in, I am ready to write this recap post!
Lettuce take things back to last Monday. I brought breakfast to work and it was amazing! I added an egg to leftover roasted broccoli and a few grass-fed pepperonis. I also added in sauerkraut and avocado – SO GOOD.
After working for a while I dove into my lunch! This salad was: arugula, a pickle, carrots, tomatoes, sauerkraut, tuna, and spicy brown mustard. I also ate a handful of Siete grain-free chips.
After work and an appointment I headed to Nashville to say sayonara to this handsome guy. He’s off to Europe for a month!
Tuesday morning I woke up, worked out, and made a quick breakfast of one egg+leftover pulled pork over arugula and sauerkraut to eat while I ran errands with my mom.
For lunch that day I had leftover salmon and quinoa plus sauerkraut, carrots/celery, and Tessemae’s avocado ranch.
For a little afternoon pick-me-up I picked up some iced coffees and pumpkin pie hand pie to share with my mom! Spencer’s coffee is definitely my favorite coffee in town!
Wednesday morning I did a quick and sweaty workout. I also switched up my savory breakfast for my beloved oatmeal. This was fall inspired since the weather finally cooled off! I used this recipe: CLICK HERE.
I ate my oatmeal at work alongside a cup of pumpkin spice black tea!
For lunch I had arugula, avocado, and tuna + a sparkling water. This is not the prettiest lunch…but it was tasty!
I can’t remember what I did Thursday other than workout, go to class and the grocery store. I picked up pumpkin and butternut squash ravioli to eat with roasted broccoli and sausages.
🎃BROWN BUTTER PUMPKIN & BUTTERNUT SQUASH RAVIOLI:
-1 package of pumpkin ravioli
-1 package of butternut squash ravioli -1/2 C grass fed butter
-1 tsp dried sage
-1 tsp cinnamon -salt & pepper -hickory smoked grass fed sausage
Cook ravioli & sausage according to package – while those are cooking, place butter on a skillet on medium-high heat. Add in sage, cinnamon, salt & pepper. Continue to stir as butter bubbles. Once butter turns brown – remove from heat, takes around 10 mins.
Mix brown butter & ravioli. Serve with sausages. Also serve with roasted broccoli!
For lunch on Friday I had a Siete cassava tortilla with turkey, arugula, spicy brown mustard, and a pickle!
Around 2:30 I picked up my friend Tony to take him to the ER…luckily it was just a nasty case of bursitis.
For dinner that night I made turkey taco bowls! My mom made Mexican rice while I made the turkey mixture with mushrooms, onions, and peppers. I put everything over arugula and added a salsa+mashed avocado mixture on top.
On Saturday morning I woke up to a slight chill in the air! I fired one egg with leftover turkey and added salsa, guacamole, and arugula. In case you couldn’t tell, arugula has been my go-to these days. It’s just so tasty!
Saturday evening I went out to eat with some of my sweetest friends who are moving soon! Ugh. I will miss them dearly but I am so happy for them!
Sunday we did the church thing and then took this little cutie out to do errands… I just love him. LOOK AT HIS PAWS CROSSED. i die.
I spent the rest of Sunday doing a ton of homework. My mom made chicken stew that I happily ate alongside cornbread and some sparkling water.
Monday was PERFECTION. The weather barely reached 60 degrees and I was SO HAPPY. I finally pulled out my fall clothes and sipped on my favorite Spencer’s coffee while I walked to my therapy appointment. I could not get enough of being outside!
I also received happy mail! And now we have finally made it to TODAY! Congrats if you made it this far. I love you. Seriously. After my workout I made a quick breakfast featuring a grass-fed sausage link with an egg, spinach, and guacamole.
