Well, hello there! This week has been a wonderful one so far. I am slowly getting back into the swing of taking pictures again. I went most of the summer without really snapping pictures of my food so it’s been nice to get back into the flow of things.
The kindest people at Banza pasta sent me their new bowtie pasta to try. I cannot wait to dig into this pumpkin alfredo recipe!
I went down to Nashville on Thursday (9/19) to knock out some homework while I waited for the guy I’ve been seeing to get off work. I studied a few hours at Dozen Bakery per his suggestion and I immediately fell in love with the place. It was bright and had a super friendly staff. Plus, the coffee was amazing the menu consisted of giant baguettes you could get with different toppings. I ordered jam and butter on a “small” baguette!
After studying for a few hours cutie man picked me so we could take a quick walk and hang at a Brewery for a while. He had to head back to work so I headed to Pinewood Social to knock out a few more hours of studying before we met up again for a late dinner. I think knowing I was under a time crunch due to him getting off work/having to go back to work really forced me to get as much homework in as I possibly could. I ended up writing two papers and turning in two case studies!
Saturday I had to be at work from 8:30-6:15ish. My face tells it all…I may or may not have been counting down the hours until I got to go home and drink tequila…

This past weekend was a VERY SPECIAL one for my church – the Bishop was here to visit! I missed all the festivities on Saturday but I at least got to be there for everything on Sunday. We had one parishioner become a Deacon and one a Sub-Deacon – both a huge honor and it was truly a special service for our Church. I was so glad I got to see His Grace, Bishop Anthony!
I didn’t eat during coffee hour so I headed home to make scrambled eggs with avocado and spring mix before diving into more homework.
I couldn’t believe how fast the weekend went by. I woke up super sleepy Monday morning! I had a quick breakfast of 1 egg scrambled and a piece of toast with almond butter and blueberries. The rest of Monday was spent going to both jobs, working out, and then hanging with my family.

The above photo is a great representation of the weird salad combos I’ve been LOVING lately. I have been super into mixing arugula with grass-fed pepperonis, sauerkraut, pickles, and honey mustard (not the dressing…the actual condiment). I enjoyed this salad Tuesday at work before taking a break for an appt and then meeting cutie man as he passed through Bowling Green on his way to Indiana.
I also made homemade chocolate chip cookies for my coworkers! This was a BIG deal to me. I haven’t make “unhealthy” (AKA: real deal) cookies for fun in a LONG time. Like, may 8 years? Before my eating disorder in high school. I seriously had so much fun just watching Netflix, baking cookies, and eating cookie dough. It’s so crazy how far you can come. I didn’t regret a single bite!
Wednesday morning I woke, headed to work, and downed my daily supplements while eating my oatmeal. I started adding B-12 into my daily routine ever since watching THIS VIDEO by the Holistic Psychologist. I have definitely felt better!

My yearly Fall craving kicked in hard core on Wednesday so my mom and I picked up candy corn and peanuts 🙂 Eating this will be a part of my daily routine from now until Nov. 1st!
Unfortunately I had to spend the rest of Wednesday studying…but man, oh man, is my study buddy handsome.
Thursday was all about work, picking up my new phone, and snuggling with this guy!
And snacking….
….and eating a weird salad combo again. I didn’t want anything too filling since I had a workout planned and this did just the trick! Arugula, sauerkraut, 1 egg+1 egg white, 2 grass-fed pepperonis, and a pickle.
After my workout, doing laundry, and then doing a little homework – it was time for dinner!
My mom and I had grass-fed sausages over leftover pesto pasta with kale and mushrooms. SO GOOD! This was ridiculously filling. I spent the rest of the night watching “Workin’ Moms” with my mom. That show is hilarious!!

And now I am at work eating my beloved oatmeal. Today’s combo: classic PB, banana, and chocolate chips. My, oh, my.

The pumpkin Alfredo sounds interesting! Fettuccine Alfredo is my absolute favorite food but it’s so bad for you 😩 at least the pumpkin sounds healthier lol. All of the pics in this post made me hungry. Especially the salad photos…yum!
