Happy Wednesday! I am still writing from my mom’s laptop but I am currently stalking the tracking number on my new laptop so hopefully it comes in today!
I hope you all are having a wonderful week and if you are a WKU student…I hope you are powering through those finals.
Lettuce start this recap off with this delicious dinner my mom and I cooked up for our family last week. I picked up chicken from The Fatted Calf and marinated it in some Primal Kitchen Greek Dressing for several hours before grilling it. We also had white rice, zucchini, and shishito peppers.
For the zucchini, I added olive oil to a pan with garlic and once the zucchini were pretty cooked through I added salt, pepper, and the juice of half a lime.
Once the chicken was done grilling, I topped it with the rest of the juice from the lemon.
For the shishito peppers, I added them to a pan with olive oil and once they were cooked through I let them simmer in a spicy ginger soy sauce.
The next morning I powered through an Alexia Clark workout and enjoyed one of my favorite quick and filling breakfasts. GF bagel thin + veggie egg scramble.
Saturday morning started bright and early at the Farmer’s Market. I snagged some fresh strawberries before the market even opened and oh my these are heavenly! They are sweeter than the store-bought and they are so cute and tiny. I have been enjoying these all week-long.
Saturday night I whipped up a Mango Margarita recipe to enjoy with my friend Hannah and her sister Sydney for Cinco De Mayo! After sipping on these, we went out to a local Mexican restaurant for the real deal margaritas and chips, salsa, and gauc + lots of girl talk.
Can I just say I have never been this happy before in my life? God works in mysterious ways. I have seriously never laughed more and enjoyed my life more than I have in these last few weeks. Partially this is due to my friend Hannah – she forces me out of my comfort zone, keeps me laughing, helps me navigate the dating world and guys, and just helps me love life! Love you Hannnahhhhh <3

Sunday morning started at 5:30 with a dog walk because Owen wouldn’t stop barking. He was ready for the day bright and early! How beautiful is God’s creation?
I spent the rest of Sunday at church, running errands with Hannah, and then eating popcorn in bed while watching Parks and Rec. That show NEVER gets old.
Monday consisted of a workout, work, finals, and this delicious dinner! Ancho chile chicken taco bowls!
Tuesday morning I enjoyed a mint chocolate protein shake topped with trail mix after a killer workout.
I was pretty dang excited about Tuesday being my last day of school! Only a presentation and a final stood in my way for summer break.
Also, I have been enjoying my quiet time outside in the mornings because the weather has been so beautiful! Do you spy my favorite little pup in the background?
Me after my last final….so freaking excited. I spent the rest of the evening watching Parks and Rec and eating popcorn + M&M’s. I know, I know…I really celebrate hard-core haha

Wednesday morning I slept in (another way to treat myself for finishing school!) and took my time making this oatmeal bowl.
Here’s the details: 1/2 C oats, 1 T chia seeds, pinch of sea salt, 1 C cashew milk, 1 T maple syrup — heat in a pan until oats have absorbed liquid. Remove from heat and top with favorite toppings!
And I think I will end this recap with my favorite little guy…
One Saturday morning I woke up and was determined to get a puppy that day. It was a weird feeling, but I just knew I needed one. A few weeks later, I went through two of the hardest moments in my life so far and this little guy has brought me more happiness than anything. I think God placed that thought into my head to get a dog that day to allow me to have a companion through these tough times in life. This kid is getting so big and I don’t know what I would do without his love! Dog mom rant over. 🐶💕😭
