
I had a few people message me about exactly how I made these vegetables – so I thought I would do a quick post on them! 🙂
Roasting vegetables is my absolute favorite way to eat them! Plus, it is super easy!
Here is what you need:
- 3 small sweet potatoes
- 2 broccoli florets
- 1 small bag of baby carrots
- 2 cans organic chickpeas
- sea salt, pepper, garlic, cinnamon
- olive oil
- tamari
Here is what you do:
- Preheat the oven to 400
- Drizzle the carrots with olive oil
- Season with sea salt, pepper, & garlic
- Drain chickpeas
- Drizzle chickpeas & broccoli with olive oil & tamari
- Season with sea salt, pepper, & garlic
- Scrub sweet potatoes
- Dice sweet potatoes in small bites
- Drizzle with olive oil
- Season with sea salt, pepper, garlic, & cinnamon.
Roast everything for 45 – 60 minutes (or you can poke a fork through the vegetables!)
Enjoy with chicken, turkey burgers, veggie burger – or eat them on their own! <3
