One Year with Owen, Lots of Running, & Freezing Cold Temps.

Happy Thursday beautiful people! I hope you are having a fan-freakin-tastic week! I know I am. It is ridiculously cold in KY today but I can’t complain…I have a thick jacket to wear and a warm bed to sleep in at night. Do you ever think about what your grateful for? Every morning when I wake up – I immediately start thanking the Lord for all the things I am grateful for as I let Owen out and make coffee. I have been especially grateful for warm clothes this week. <3

Lettuce go back to last Monday because apparently that’s where I left things. How cute is my favorite little guy?!?! His eyes kill me!!! (Am I too obsessed?!?!…nope)

I spent all of Monday at work for MLK day! I was more than ready to crawl into bed when I got home.

Tuesday morning began with my usual 4 am routine and then I headed out for a run while the sun came up.

I made a smoothie to enjoy before my bio class…but dropped it everywhere right after this picture. I was mad for a split second then immediately started laughing at myself! I was sooooo glad that stain came out.

After microbio I headed into work until 4:30.  For lunch & dinner I had the exact same thing: a big ol’ plate of roasted vegetables.

Wednesday morning I went on another run before heading into work all day. I love coming home to this guy!! 🙂

For dinner I had chickpea pasta with pesto and brussel sprouts. So tasty and good!! (Recipe HERE!)

Thursday morning I was up bright and early at 4 am to do my Morning Miracle before heading out for another run with Owen. Can you tell I THRIVE off routine? Literally everyday is almost the same and I love it. lol

I spent Thursday evening at my friend Mandy’s house. We made sweet potato curry (using this recipe: click here) and it was seriously incredible. We wish we would have added more veggies though! But – it was incredibly easy to make! Then we finished cutting out pictures for our dream boards! Do you have a dream board? Or do you know what a dream board is?!? Manifestation baby!!

I slept in a while Friday morning since I got to bed later. I did a quick power walk with Owen, my morning quiet time, and then got ready for work. I don’t really that much that I did on Friday..it was very uneventful but still wonderful!

I woke up early on Saturday morning to run…but there was snow on the ground! I took it as a sign to cozy up with coffee and a book instead. A little later in the morning I met up with my sweetest friend, Shelby, at Wild Eggs for breakfast. I didn’t get to hang out with her very much last semester because my schedule was insane. So happy to reconnect with this cute friend of mine!! Her wedding is in just a few months 🙂

After breakfast I went to Aldi to get some groceries for the week. I was so excited because I picked up some ingredients to make PB&J bars. I headed over to my parents house a little later in the afternoon to make them. They turned out pretty darn tasty! And can you believe they’re healthy?

I spent the rest of the evening at my parents house watching the UK game, eating dinner, and then watching Justified before I fell asleep. In the early morning I packed up Owen and headed back to my place so I could get ready to teach my Sunday school class.

Sunday also marked my one year anniversary of having Owen! I cannot believe it’s been a whole year!! Here is my first post on him: click here.

After church I went over to my friend Sarah Bridgeman’s house to record a video on Keeping it Clean in 2019! She talked about cleaner beauty products while I talked about cleaner protein powder.

Afterwards I went back home to go on a quick run with Owen since the weather was so wonderful. I feel so bad when he doesn’t get some type of exercise a day! He definitely keeps me motivated to exercise.

After my run I grabbed a banana and headed out the door to go to my parent’s house again. Aren’t parents just the best for getting a free meal? Haha – but I do enjoy spending time with them! A little later Owen and I headed back to my house so I could ready for the week.

Monday morning I woke up ready to conquer the week! I said my morning prayers, drank my coffee, did my devotional, said my affirmations – and then I was ready to run! Owen and I headed out for a quick run before the sun came up and I have to say it is one of my most favorite parts of the day. Being awake before most of the town is so calming. My other favorite part of my day is taking that first sip of coffee! Who can relate?

After our run I got ready for work! Most of the day was spent working – and then I headed to the local coffee shop to knock out some studying for my microbiology test. Before I left I downed a smoothie for lunch! (1/2 frozen banana, 1 scoop chocolate plant based protein powder, ice, almond milk)

So this is stupid, but there is this guy I keep seeing at the coffee shop and I saw him Monday!! I am determined this person is somehow supposed to be in my life so I told myself “okay, Anastasia- it’s no big deal just go up to him before he leaves and introduce yourself. It’s no big deal, he’s just a person and you’re just a person!” Well, I got myself super worked up, very set on going up to him because the worst that could happen was that he was like “uhhhh weirdo” and then that would mean he’s a rude person and I obviously don’t want to be around rude people – so there was nothing to lose! This is turning into a rant, isn’t it? Alright – I’m wrapping it up I promise! Out of the corner of my eye I saw him gathering his things to leave and I literally could not force myself up! So I watched him leave and kicked myself the rest of the day for not saying anything. Why do I do this to myself?

The rest of my evening involved my night class, a quick dinner (recipe HERE!) and then bed because I was EXHAUSTED.

Tuesday was the same morning routine – and then I took my exam! Fingers crossed it went well, I actually have a really good feeling about it. I am just anxiously awaiting my professor to enter in the grades.

Wednesday morning there was a huge cold front that came through so everything was closed! I warmed up my car regardless and headed into work – my paren’s own a tire store and you can’t really shut down because semi’s need work done most when it’s the winter! I worked most of the day, headed home to work on my business a little and then headed to church for the evening.

I was exhausted when I got home and immediately made dinner and snuggled into bed.
