Easy Peasy Granola!

My go-to granola recipe - I have a hard time keeping this in the house because it goes so quickly! Luckily, it only takes 20 minutes to make :)

Ingredients

  • 3 C Rolled Oats
  • 2 tsp cinnamon, ground
  • 1 tsp ginger, ground
  • dash salt
  • 1 tbsp flax seed, milled
  • 1/2 cup walnut pieces
  • 1/2 cup dried cranberries
  • 1/3 cup almond butter
  • 1/4 cup maple syrup
  • 1 tsp vanilla extract
  • drizzle honey

Instructions

  • Preheat oven to 350. Combine oats, cinnamon, ginger, salt, flax, walnuts, and cranberries in a large mixing bowl. In a separate small bowl microwave the almond butter, maple syrup, and vanilla for 45 seconds (until creamy and combined well). Add almond butter mixture to oat mixture. Spread out mixture on cookie sheet with parchment paper. Bake for 15 minutes. Once done, let the mixture cool completely!! This is important - when it is completely cooled it creates the perfect chunky granola cluster. Enjoy!
