It feels weird to be posting pictures I took weeks ago but it’s my blog so I get to make the rules. I took so many random pictures this summer but I just never took the time to blog them. I am finally compiling some random eats that we enjoyed! I hope you find them inspirational for meals of your own!

But first I must tell you – the watermelons at the farm stand in our neighborhood were a HIT in our household this summer. They were SO FRESH! And we also discovered a peach tree in our front yard that produced a ridiculous amount of peaches! A lot of cobblers were made.

One of our favorite date night activities involved homemade pizza! I used THIS recipe to make homemade sourdough pizza crust and topped it with pizza sauce, pepperonis, pineapples, and cheese. I also added olive oil and everything bagel seasoning to the base of the crust – perfection! We have been dragging our mattress into the living room for a living room “camp out” and watching random movies / tv with our pizza as well as playing Sequence!


I feel blessed I get to own a cafe where I get to eat breakfast and lunch everyday. I go through phases of what I eat everyday. A few weeks ago I was on an oatmeal kick! Topped with berries and the most delicious peanut butter!

And it wouldn’t be a blog post without random photos of Owen, now would it? 🙂 My sweetest friend Mattie surprised me with a visit last week and it MADE MY WHOLE WEEK! She is the best and I miss her lots.


Okay – so this has been one of my favorite easy dinners to throw together when I need something quick to eat. I fry up a salmon burger in a little olive oil, add to spring mix with carrots, fresh tomatoes, avocados, and Pierogis all topped with Tessamae’s ranch!


This random meal below was a base of quinoa topped with ground turkey and avocado! And more Tessamae’s ranch. I always forget how good quinoa is! I need to make it more.

We love to make chicken sausage or turkey sausage with a side of veggies. This time we made sweet potatoes fries, broccoli, and pickles!

My absolute FAVORITE meals are ones that are Mexican inspired. We love rice, A Dozen Cousins beans, ground turkey or beef with cheese, salsa, and guacamole. This meal always comes together in around 15 minutes and makes great leftovers! I enjoy eating this with plantain chips!
