Hello, hello, hello! It’s been a minute since we last talked! Over a month I believe! I wanted to update you all on a few things going on in my life lately. It’s been such a blessing at the cafe. Truly! When I opened, I had no idea if I could do it…sometimes, I still think that. The Lord proves everyday how He is looking out for me! I couldn’t do this without Him!
Let’s start things off with my new brother LOL – my mom got herself a mini Sheepadoodle! Meet Brooks! He is SO STINKING PRECIOUS! I think I love him so much because my mom loves him so much. It is really sweet to see just how much she loves this little guy. She will be an amazing grandmother one day if Leon and I are blessed with children!


One night I made enchiladas for my husband and our house guest! I mostly just wanted to show off the cute apron my mom picked up for me for Easter. She got it at the Kenzie Parker boutique in Bowling Green.

Owen is still being Owen. AKA absolutely ADORABLE! He gets more and more precious each day!



It has been unseasonably hot this Spring. Leon and I decided to get the boys a kiddie pool to play in but they could have cared less about it. We cooled off with a beer and then ate nachos for dinner. We love making nachos! They are so simple to make and always hit the spot!


One weekend Leon’s family came to visit. They stayed at an Airbnb close to our house and it was on a farm. We had the best time playing with the baby goats! A dream of ours is to own a farm one day and baby goats are now on our list of what we want on our farm! I love dreaming up the future with my sweet husband 🙂

This is just a random dinner to show you healthy eating DOES not have to be difficult. This meal came together in just under 30 minutes – salmon burger cooked on the stove top in tamari, roasted carrots/broccoli, and sourdough bread. I covered everything in Tessemae’s ranch. I actually always buy frozen broccoli florets because it saves time not having to chop!

I have been loving oatmeal for breakfast (what’s new!?). I don’t get to enjoy a slow morning at home too often any more since I am at the cafe so early, I love making thick oatmeal on the stove while I sip coffee and read!
-1/2 C rolled oats
-1 C water & splash of half n half (or use whatever milk you want, we just literally have ZERO groceries 🙃)
-1/2 tsp vanilla extract
-pinch of sea salt
-1/2 tsp cinnamon
-1 T milled flaxseed
Combine ingredients on stove top until oats absorb liquid and oats are thick!
Top with strawberries (I used the ones in our little strawberry patch 😭), chocolate chips, drizzle of honey, and peanut butter!!❤️

I love that fresh tomatoes are coming back in season. We have a little farm stand in our neighborhood that sells the best tomatoes. I ate some plain with just a little sea salt and pepper! For dinner I made ground turkey and mushrooms, chickpea pasta, roasted broccoli, and pesto!


I was so happy Thursday and Friday! I had two days off with my incredible husband! After my dental appointment Thursday we drove over to the lake to lay out in the sun, eat snacks, and talk.

It was truly a treat 🙂

Friday we spent time cleaning up our backyard, riding bikes, and eating hot dogs at Paradise Point in Scottsville. I love getting to spend time with my best friend and favorite person! He continues to show me how kind and selfless he is. I really lucked out in the husband department!



I also made strawberry crumble bars with the fresh strawberries in our yard – man oh man! These barely lasted the whole weekend. They were incredible! I will make them again ASAP because we never even took the time to cut them…we just are straight out the pan!

For dinner we wanted something that was light and refreshing. We had sesame salmon, fresh tomatoes, roasted sweet potatoes, and strawberries all over an orange vinaigrette spring mix. We used Rachel’s Good Eats orange vinaigrette on her Instagram for the dressing and it was AMAZING!

We went to such a sweet wedding last night! We met such a nice couple who have been married for 21 years and have 7 kids! I always love hearing successful marriage tips from people who have been married for some time. Every time I ask for a “secret” to marriage. I get a different response! I should write a book with advice I have received. Its good stuff!
This morning I woke up to a rainy Sunday morning. I sipped on coffee, finished the book I had been reading, and made oatmeal for our house guest (hi Mattie!!!) and I before getting ready for church!

The rest of our Sunday has been perfectly lazy! I got some work done for the cafe and cooked up a semi-descent pork tenderloin for dinner. I hope you all have the best week! I am looking forward to another wonderful week. Thanks for reading 🙂
