

Hello lovely friends! Welcome to my little corner of the internet! It is currently 6 am and I am writing this recap with all of our windows open and the sound of the rain coming down outside. Not an ideal way to start a Monday, but it sure is relaxing! Lettuce take this recap post to last Sunday! Before church I made us a small breakfast: pb & j english muffins, scrambled eggs, and chicken sausage. After Leon and I went to church we stopped by the cafe so I could show him the progress made and then we headed back home!

I ended up making marbled banana bread because we had some bananas that were about to go bad! I always use Rachael’s Good Eats GF banana bread recipe because it is PERFECTION! I never make banana bread well when I use other recipes except for when I follow her recipe to a T and it comes out perfectly every single time. The rest of Sunday was spent at a get-together with some friends of our family. It was nice to see everyone since I hadn’t seen some people in a while!



Monday was all about the cafe! (Most days are…lol). Owen kept me company most of the week! The counter was finally installed and it turned out perfectly! We repurposed the Zest countertop from the original Zest Owners and it made me so happy to have a piece of them there.

Leon made us burritos and they always turn out SO GOOD. He used to work at Subway in high school so he really knows how to stuff tortillas! lol.

I have been eating lots and lots of oatmeal – but what’s new there? This one is: 1/2 C oats, 1 C milk, cinnamon/sea salt/cinnamon extract, 1/2 C frozen blueberries – all heated until liquid is absorbed. Topped with flax seed, peanut butter, and date syrup. I had a workout that morning following by protein powder mixed with almond milk so I already got my protein for the day!

One day last week I had a late lunch with my mom and sister. My mom and I split a burger/fries/& mocha shake at Burger and Bowl. Everything was DELICIOUS!

On a different day last week (I truly get all of my days confused when I do these recaps, so bear with me! lol) Leon and I laid out at the park since it was beautiful weather and it was the perfect way to de-stress. I am so lucky to have a husband who does all he can to help me when I am feeling anxious and worried.


For dinner I made us salmon burgers, roasted carrots, and rice. I drizzled everything with the Primal Kitchen Cilantro Lime dressing! I swear when we don’t have groceries and I have to get creative with our meals, is usually when everything tastes the best!

Owen and I have been going on a lot of walks together since the weather has been so great! I love that we live near trails.

For dinner one evening I made Leon and I veggie-packed sloppy joes which you can find the recipe for: HERE. I usually use frozen broccoli florets when I made roasted broccoli because it is cheaper and involves no chopping 🙂

Owen and I have been eating A LOT of popcorn lately too. Connect Snacks sent me several bags of their non-GMO popcorn to try. I have made it with butter and coconut oil and I think I favor the coconut oil version! It holds up better the next day too. It stays crunchier!

Owen is a pro at 2 things: begging for popcorn and catching popcorn in his mouth!

My mornings usually start with a bible study (I am still loving my one on idolatry) and breakfast afterwards!


I usually go see my parents at their work while I can before the cafe opens! I love getting to see Oslo too 🙂 He usually keeps my mom company while she is working!


My CUTEST sister went consignment store shopping with me on Friday to search for a few things for the cafe. We walked away with A LOT of goodies! I even snagged a dress from the 1940s to wear this summer 🙂

I woke up super early Saturday morning to deep clean some things at the cafe. It was a pretty discouraging morning. I want so badly for this cafe to just be READY. Things keep being pushed back, parts are taking a while to come in, and the place is just dirty. I have to remind myself that it will all come to fruition in God’s timing. Because His timing is perfect! It has all been in His timing and things have always worked out – I just have to keep that in mind! I spent the rest of the day running errands with my mom though 🙂 So that put me in a good mood! Spending time with my mom is good for my soul!

Saturday night was a rough one. I have been battling with some MAJOR body image issues. I wish I could put on a smile and tell you I never have body image issues but that would be a big lie. I broke down crying just about all the things I didn’t like about myself (my poor husband!). I wish I could say this doesn’t usually happen, but it has been happening a lot more lately. The devil usually finds his way to creep in and fill my mind with doubts. Fortunately for me there is good news – 1. Jesus loves me and 2. I have the world’s best husband. I woke up Sunday morning to sticky notes in all my frequent places (coffee pot, computer, mirrors…) with the sweetest words. My love language is words of affirmation by the way – in case you couldn’t tell. I decided to take advantage of the beautiful morning and go on a walk with Owen to clear my mind. I listened to a podcast on body image through a Christian perspective. It is a 3-part serious on the Daily Grace Co podcast and I highly recommend!

Here are a few of my takeaways: 1. Our bodies are good because they are the vessels of the Holy Spirit. 2. We should choose to not feel shame about our bodies but use our bodies as a means to Glorify the Lord and follow His commands in scripture. Tell the enemy we are not listening to his lies and Glorify God with our bodies.
I am clinging to these two things this week when I feel negative thoughts creep in about my body!


After a wonderful walk I made us some coffee, got ready for church, and took some oatmeal to eat on the way! It was a great church service and then we headed to the cafe to drop off a commercial toaster I purchased over the weekend. I love that the date we got engaged is in the sidewalk 🙂 Since we got engaged right in front of the building!


Afterwards we headed to my parents house for a late lunch/early dinner! Everything was delicious – per usual! My parents made smoked chicken thighs, brussel sprouts, mac n, cheese, broccoli salad, and smashed potatoes!

Oh! And my mom made the best homemade bread! How cute / great is she?! She makes the world’s best bread – and I am not being bias! It’s the truth.


That’s all I got this week folks! I have more deep cleaning to do at the cafe today, I need to knock out a workout, and I plan to soak in these days of just hanging out with my husband before the chaos of the cafe opening sets in! Have a wonderful week!
