Good morning and Happy Sunday! I just finished cleaning up the house, getting some laundry done, and planning out my week. I thought it was the perfect time to do a recap post with you all! I love writing recap posts – it is so fun for me to re-live the past few weeks and then look back on old posts! Lettuce get right to it!


This morning for breakfast I had half a cinnamon raisin bagel with peanut butter, an egg, and a chicken apple sausage link. We didn’t make it to church this morning so I spent some extra time reading and talking to God. My day almost always starts with reading the Bible and doing a Bible study. It sets my heart and mind up for a great day. Lately the days haven’t been super great but the reassuring thing is that I can rest in God, knowing He always provides for me! I have been diving into the book “Gods at War” by Kyle Idleman. I HIGHLY recommend. It really challenges you to think about what you place on a pedestal in life.

Any who, let’s rewind a few weeks. Leon’s family came to stay with us for my bridal shower weekend. We ate great Mexican food, went bowling, I made everyone breakfast, and we just overall enjoyed each other’s company. You can read all about my beautiful bridal shower HERE.


Unfortunately, I spent the rest of the week sick! The below picture was basically my uniform for the week. There is still a butt imprint on our couch from where I didn’t move the whole week. Whoops. Turns out, I kind of needed to be sick. Everything in life has been pretty overwhelming and my body needed a week to fully rest.

Leon and I had no shortage of delicious food. One day I made eggs, ham, and sweet potatoes while he ate some french toast!


We were completely out of groceries one evening so frozen pizza and frozen green beans were for dinner.

I made a super simple salmon salad wrap for lunch one day! You have to try it! I used 1 packet of salmon, celery salt and pepper, and a little lemon juice. I also had an apple and Siete salt and vinegar chips (my favorite!).


I made Leon a super tasty grilled cheese with ham and an egg added!

We spent our days watching Schitt’s Creek and Abbott Elementary. We also played Schitt’s Creek Monopoly and Battleship. We loved having a week to just hang out together! Even if we were both sick.

Here is some random dinners I made! Teriyaki chicken with roasted veggies one night. Crispy chicken with sweet potatoes and a side salad another night!


I finally started feeling back to normal so this past week was all about getting into my workout routine. The first workout back was sooo tough. My body felt so stiff. But I pushed through and by the middle of the week I was back to full strength and energy. I eased back into everything by going on walks with Owen and sticking to strength training rather than going right into high-intensity.


One night for dinner I made chicken parm and spaghetti squash. This was super tasty and great comfort food since the temperatures have been incredibly cold!

I have also been eating oatmeal like every single day! I blame the cold temperatures, lol!

I posted the recipe to this easy No-Bake cookie oatmeal which can be found HERE. I seriously can never get enough oatmeal, it is so incredibly delicious!

For dinner one night I made Greek-inspired meatballs with a chickpea pasta salad. I also had popcorn and protein hot chocolate 🙂 I have been using Equip chocolate protein after I saw one of my favorite people to follow on Instagram, FoodFitnessFaith, recommend it. It is definiltiey my new favorite protein! And it is made with only 3 ingredients.


I was back to work this past week! It has been the ultimate struggle these past 5 months with this business. I love it, I really do. But everything you can think of that could negatively impact a person and a business has happened. You name it, it’s happened to me. But I need to stop complaining. God continues to provide and bless me in ways I could never imagine! Lets just say He has been teaching me patience and trust 🙂 I did treat myself one day to my favorite breakfast sandwich! I mean ,just look how good that is!

So much juice this week 🙂


I have been enjoying walks with Owen when I get home to decompress from the day. I usually listen to The Office Ladies podcast while I walk to pass the time!

I had put chicken thighs in the crockpot with a can of salsa verde one day. They turned out so good! It made for an easy few nights of dinners.

and finally, this picture of Leon. It’s my favorite. And we get married in just two short weeks. I really can’t wait to call him my HUSBAND and I really, really can’t wait for him to call me his WIFE.
