
Well, its January 6th and snowing SO HARD right now. I love it. I have been super MIA from the blog lately. Life has been beyond busy! In the best way possible, of course. This post is filled with everything I have been up to as well as a little recap or our Christmas and New Year’s. I can’t believe that this is my last week as a 25 year old. I will be 26 on Monday and that’s pretty exciting! We are also getting married next month and my cafe is opening SOON…so many changes…so little time! Luckily, we serve a gracious God who has been carrying me through it all!

Lettuce rewind back to Christmas time! We spent a few days with Leon’s family and then Christmas Eve with my family.





This was the first Christmas in 25 years I wouldn’t wake up at my parents house! I cried, A LOT. I am a very emotional person. Luckily my fiance is the kindest man in the whole wide world and made our Christmas so special that I felt silly for even crying. I woke up to gifts under the tree and the sweetest letter from him in my stocking (my love language is words of affirmation…written on paper!). I feel so lucky God placed the exact person He knew I needed into my life to be my husband. We spent the day opening gifts, letting the dogs play with their new toys, and playing scrabble. Leon had to work that night so I visited my parents for a little bit and then headed back home!




After a lovely Christmas it was time back to work for me! I feel bless I get to make fresh juice all the time and down as many fruits and veggies as I can handle!


I love this new little sign my brother got me for Christmas! It is the perfect addition to our kitchen and makes me smile every time I see it!

I must say – we have been eating VERY well these days. We wrote out a budget and have been sticking to it fairly well, especially when it comes to buying groceries. I liked writing out meals for the week so I don’t buy too many unnecessary things. We have been eating a lot of vegetables too which always makes me feel my best!


On New Year’s Eve Leon had to work so I headed to my parents house to ring in the new year! I brought healthy snacks to share with everyone and I was pretty darn proud of my kiwi flowers! My mom made delicious tacos, we played tons of games, and then I headed back home in the pouring rain!


The next morning I headed back into town to make some juice deliveries! I stopped by my parents house to have the BEST french toast ever! We went to the mall to look for wedding shoes after that and then we got a tornado warning alert on our phone. It was crazy to see everyone around us go into immediate panic mode. We booked it back to my parents basement and hunkered down. We missed the tornado by just a few minutes over by the mall! I think everyone is still on edge from the devastating tornadoes that just went through our area!


This past week has involved more working, more workouts, and more delicious eats! I clearly like to stick to a routine. #capricorn We got enough salad ingredients to have a side salad at every dinner and it’s been a nice addition each night to our meal! One night we had chicken thighs and Primal Kitchen golden BBQ sauce with roasted veggies and another night we had steak!

The salad is: spring mix, arugula, feta, strawberries, apples, cranberries, walnuts, and Primal Kitchen balsamic dressing.

One day I made a delicious breakfast sandwich! I toasted two pieces of Hawaiian bread with white cheddar, bacon, egg, and avocado!



And I have also been enjoying this insanely tasty and filling oatmeal bake – I posed the recipe HERE.

And then last night for dinner I made a salad and my favorite tortilla pizza! Also, have you tried the Alani Nu sparkling waters? They are definitely my new favorite!


Well, I am off to enjoy the snow, get some work done for the cafe, finish a few wedding things, and try to Glorify God in the process! Happy Thursday, friends! 🙂
