
Hello there little cutie patooties! I am currently drinking coffee…at 5:30 pm. Which is really putting me in the mood for breakfast foods. I guess it’s a breakfast for dinner kind of night! Speaking of breakfast…look at that bowl of oatmeal above!! I may be the only one who looks at oatmeal longingly and obsesses over how beautiful it is, but I don’t care! I can’t wait to serve up delicious, beautiful, and healthy food soon at Cafe Kindness! I included a little update on the progress below.

Anywho, is it really even October if you don’t watch Halloweentown? Leon and I snuggled up one day and watched this classic!

One night I used leftover Mexican food to make us A M A Z I N G nachos! Like legit – these were incredible. I used Siete tortialla chips as well as their queso dip. I may or may not be drooling thinking about those nachos. Nachos are always a good idea!
So it’s no secret that I am a big lover of Q coffee. Leon and I would go here EVERY DAY when he lived close by. I am so excited for their new location that will be on my way into town. I also just love how kind and friendly their staff is – they are the best and always leave me feeling super awesome!

One night I made us chickpea pasta and chicken sausage! It was SO TASTY! I love simple and healthy meals packed with protein.

Another breakfast I am drooling over…this cute little protein waffle with banana and peanut butter. Maybe that is what I will make for dinner! Can you tell I am hungry? I keep going on and on about food…


Okay I’m back. I had to go make dinner because I just couldn’t stand it anymore. I ended up making a protein waffle in my mini-waffle maker, eggs, a piece of turkey sausage, and two small bowls of Magic Spoon cereal. Have you had Magic Spoon yet?! OMG. It is so so good! It is protein cereal minus added sugar…I love it so much. It came in the mail today and I was so excited to try it! I can’t wait for Leon to try it because he loves sugary-cereals and this is a much better alternative!

You know what else is tasty? These churro strips! Ughhhhhhhh so good!! We munched on these on the way to see Leon’s family this past weekend. We have been eating some pretty wonderful food lately. I am all about it!

Sunday was spent trying out a new church with Leon, napping on the couch, drinking lots of coffee, and eating burgers at my parents house. A perfect and wonderful Sunday! I always look forward to Sundays because its the day Leon and I get to spend the most amount of time together and just hangout at home!
Monday morning we walked over to the gym because it was BEAUTIFUL outside!

And then I was off to work! Here is a little building update. Cafe Kindness is coming along quite nicely 🙂

I was super happy to get to spend some time with my dad <3 We went over to Spencer’s for coffee and to share a granola bar after. My dad always knows the perfect thing to say! He is such a great encourager. I would be lost without my supportive parents during all of this!
One night for dinner I made Leon and mini-meatloaves, green beans, and smashed potatoes! This meal was delicious! Thank goodness I had some of my mom’s homemade rolls in the freezer that I could pair with this meal.

That’s all I got this evening! It’s been pretty busy and wonderful around here these days but that is nothing new! It’s always busy and wonderful! Thanks for stopping by the blog today! I <3 you!
