Oh my goodness, I missed you! Please grab your coffee or tea and snuggle up for a LONG recap post. I hope you like pictures of food, dogs, me, and coffee…because that’s what this post is all about! Oh wait…aren’t all my posts like that?! *slightly chuckles to self*

Any who, I’ve got King of Queens on in the background, granola baking in the oven, and I am ready to write!!! If you haven’t made my 20-minute granola yet, you are seriously missing out. #humblebrag I make it all the time!

So…there’s some pretty exciting things going on over here and I can’t wait to fill you in on EVERYTHING! But for now, you must be patient!! Don’t you hate when people do that?! I do. But forreal, trust me, it will be worth it to hold out until I can tell you! š A few Saturdays ago I met my parent’s at Q! Coffee for a business meeting. My mom and I split our favorite bagel sandwich and we all split some scones. I am so thankful to have business savvy and supportive parents!

A few hours later I had yogurt, peaches, and granola before I had to go get my workout in!

For dinner, I biked over to the farm stand to grab a few vegetables to spruce up the dinner I was making. I made spinach gnocchi, with lemon chicken, and lots of veggies! This turned out super good!!

The next day I had dinner at my parents house for Sunday night dinner. I love getting to see my family, eat my mom’s amazing cooking, and snuggle little Oslo!! HE IS SO FLUFFY!!!!

For dinner my mom made homemade beef stroganoff and it did NOT disappoint. We also had salad and sourdough bread. For dessert, we had brownies and s’mores ice cream. I sure do love Sundays at my parents house š

The next day I made a HUGE salad to go with my dinner. I back on my salad game but I think it’s only because I picked up a bunch of yummy toppings. So really, I don’t really like salad that much as I really just like toppings. Toppings > everything.

I can’t remember what night this was but I made some kind of Mexican-inspired taco bowl for Leon and I!

And then one night we had sweet green beans, potatoes, chicken, and salad! I LOVE taking food photos in the summer. The lighting is always perfect š
I have been loving PB toast for breakfast still with a drizzle of data syrup. I wake up around 5:30-6:00 and spend some time with Jesus while I sip my first cup of coffee. And then I make breakfast around 8:00!
Can’t. Handle. Owen’s. Cuteness!!!!

I made a SUPER tasty meal one night with a Hello Fresh Kit – mini meatloaves! These did not disappoint! I added mozzarella cheese and it was a GOOD choice.

I love our dogs. Well…Finn and I have a love/hate relationship. He pees on things, I get mad, he looks sad, I put him outside, we move on… Finn is usually hiding so he rarely makes an appearance on the blog. I was actually petting him while he was under the bed here and the other two showed up to keep us company. LOL!
And before I knew it, I blinked and it was FRIDAY! Crazy. Time is flying by these days.

I like to joke with Leon that I would be just fine without him, but he makes my already amazing life 100000000x more amazing. I was already happy, but he made me 10000000x more happier. I never knew someone could love and support me in the ways he does. My biggest cheerleader š I thank God for him every day. You guys – never, ever settle. The right one will come along and cheer you on like no one ever has before!!
Tangent over š Anyways, I think the picture below is Sunday! Drinking coffee in the early morning sunshine may be on my top 5 favorite things to do! It’s always so peaceful in the mornings.

Sunday night dinner included chicken stirfry!!! I planned out our meals for the week and I am super proud of myself for sticking to my grocery list rather than buying all the random things I think I need to buy! LOL. This week’s menu:
Sunday & Monday: Chicken Stirfy
Tuesday & Wednesday: Turkey Marinara and Pasta
Thursday: Teriyaki meatballs & rice
Friday: Blaze pizza collab!


While working this morning, I had my favorite toast for breakfast again!!

Well folks, that was my week! It was a GREAT week. There were a few of my family members who were sick but luckily they are doing so much better!!! The power of prayer is the real deal. I hope you all have a wonderful week. I will share my exciting news with you SOON!!!!! xx
