Happy Monday, friends! How was your week? To be honest, I had a pretty rough week. It had it’s highs and lows for sure! I have really, really high expectations of people and when they don’t live up to those expectations, I get pretty disappointed. Luckily that is all just work-related and I can come home and try to move on from it. Any who, lettuce kick this recap off with some AMAZING nachos I made last weekend!
Leon actually gave me this idea for the leftover Mexican food we had! I put lime Siete chips, leftover ground rice & turkey, and cheese in the broiled for about 5 minutes. Then I topped it with salsa, guacamole, & spinach. This was super tasty! I didn’t even bother getting a plate. I just ate right off the pan while watching The Mindy Project!

Sunday was all about church + family time. We have Sunday night dinner at my parents house and I LOVE it. I was sad Leon had to work night shift but he did stop by and say hello before he went in 🙂
I made the BEST salads last week!!! I topped spring mix with fresh Amish peppers & tomatoes, pickling cucumbers, sunflower seeds, chickpeas, and lemon chicken! I also used Primal Kitchen’s honey mustard vinaigrette. I ate this salad all week it was so good!!

I can’t even handle his cuteness… I LOVE HIM SO MUCH.

One of my favorite things to do when spring mix or spinach runs low is to use the container to just hold my entire salad! I just chopped up all the veggies, threw them over the lettuce, and went to work!

I was laughing at myself on Wednesday because I was DECKED out in flowers!! It’s like I love flowers or something?! LOL.

Wednesday night Leon also made me the BEST burrito EVER! He is the MASTER at making the perfect burrito. He claims it’s because he used to work at Subway so he knows how to make sure you get the perfect bite each time you bite into your wrap 🙂

Jumping ahead to FRIDAY night … we spend some time picking blackberries in our front yard!
Then we went to Bowling Green to meet my parents for Mexican food and margaritas! I LOVE this picture of Leon and my dad.

Saturday morning something tragic happened…I made a pot of coffee and didn’t realize we were OUT OF HALF n HALF!!!! Leon woke up at 6:50 AM to head over to the Food Lion to be there when they opened at 7:00 to get me my half n half…I don’t deserve his love.
While Leon went back to sleep, I biked over to the gym and got in a tough workout!!

I showered off pretty quick and made breakfast to-go so we could meet his family in Owensboro for the day! I made us thick slices of sourdough with Amish market strawberry jam and peanut butter… aka HEAVEN!

We had the BEST time hanging out with his family. I love his nieces and nephews so much! Leon and I were both so tired on Saturday but we still made the most of our time together with his family! It was such a beautiful day outside.

I think Owensboro is such a cute town. I love their riverwalk so much!

We made it back to town around 5:30! Leon started mowing the grass and I went out to get groceries. Around 7:30 we ate spring mix, sweet potatoes, and spinach/feta chicken burgers topped with lemon dill hummus. One thing I love about summer is how light it stays outside in the evenings. It always makes cooking in the evenings more fun.

We got the boys a new dog bed since they aren’t allowed on the furniture. I think it’s safe to say Rhett loves it 🙂
Sunday morning was all about CHURCH! 🙂 Leon and I visited Scottsville Baptist because it’s right down from our house and everyone was SO KIND. We loved it! After the service there I had to book it back to Bowling Green for my church! It was my team’s Sunday to bring food for fellowship hour so I didn’t want to miss that! After church I spent time in the kitchen with my mom and Oslo! We made the BEST food!!!!
We had deer meat hamburgers, Paleomg’s BLT pasta salad, Rachael’s Good Eats potato salad, and chips! EVERYTHING was insanely delicious!!


It all wouldn’t be complete without dessert of course 🙂 Oat flour brownies (super fudgy!), chess pie, and churro ice cream. With a cup of coffee of course!!

And we were in bed by 8:45, completing missing all fireworks because I am 107 on the inside and choose sleep over fun! LOL It was a wonderful weekend!! It totally made up for my crappy week at work. I hope you all had the best 4th of July!!! I am thankful for the freedom of our country and for all the wonderful ways God works in my life.
