GOOD MORNING! It is currently 7:07 AM on a beautiful Saturday morning. I watered the plants, let the dogs out, made coffee, and I just felt like writing a little recap for you. I am pretty excited about today because Leon and I are getting a tour of our new hometown from a dear friend/mentor of mine and his wife! They are taking us to all of the neat Amish Markets, farm stands, and other little gems in Scottsville. So far we are LOVING this little town. We walk to the gym around the corner, there is a farm stand in our neighborhood where I got this squash, and everyone is SO NICE – our little old man neighbor left us corn on our front porch from an Amish Market. I LOVE IT HERE!! I can’t wait to fill you in on where we go today – Leon and I are excited to pick up more tasty treats / goodies. We have a craving for sourdough bread so I have to remember to pick some up!

Anyways, I used the squash we picked up for a super simple dinner recipe. I coated the squash in a little olive oil, salt, pepper, and Italian seasoning. Then I baked it on 425 for about 15-20 minutes. I also made chickpea pasta with vodka sauce and pan-fried some Italian chicken sausage. This meal was SO EASY. The Simple Truth chickpea pasta and vodka sauce is by far my favorite.

I have been feeling EXTRA tired this past week. Mother Nature is fixing to arrive…TMI? I have been drinking extra coffee and falling asleep even earlier than usual. My PMS symptoms change every month. One month I have terrible acne, one month my cravings are crazy, and this month – I am exhausted. One thing that remains the same is my emotions…I am always all over the place LOLOLOL…my poor boyfriend.

I have been on a La Croix kick for the past week. I was solely a Bubly gal but I switched back over to La Croix. This isn’t headline worthy news, but I figured out might want to know in case you like sparkling water too!

Wednesday was a date night! We had not gotten to cook dinner together and eat together just the two of us in our house yet so we dedicated Wednesday to each other. This is how I know I am loved…story time: I went to Kroger for us in Bowling Green and I got some RANCID meat. Like when Leon opened the package at home we were both dry heaving the smell was so foul. Leon ran back out to get us new steaks…he’s the best. THEN…later in the evening I made us brownies and realized I didn’t have any butter… so Leon ran back out into town to get me some butter. It’s the little things that make me feel so loved. We spent the day working out together, cooking dinner together, going on a little walk with the dogs, and watching our show! Perfection.

Thursday night I made us turkey taco bowls!! I wonder if Leon knew he was going to have to take pictures of me and my food forever?! I think he is on board because he was like “let’s get a picture with the plants!” LOLOL. I love him.

For the turkey, I just cooked up ground turkey and some salsa in pan. It was easy and delicious!
