Good morning and Happy Saturday! OH! And Happy Memorial Day weekend 🙂 I am currently snuggled up under a big blanket with my cup of coffee and the back door open. It’s a nice, chilly morning! I welcome that since it’s been hotter than heck. Lettuce catch up on all the things OK? Ok!

I am still obsessed with Buff City soap! I swear every scent smells so delicious. I love that they make everything in-house and with all-natural ingredients.

It’s been a pretty darn good week if you ask me. I have been working a lot, working out a lot, and eating well! Routine is what I THRIVE on – so my heart has been content.

One day I ate a super simple sandwich for lunch. Sometimes simplicity is best! I had a sandwich thin with mustard, lettuce, turkey, and aged white cheddar cheese. It was delicious!

We also took a mini-road trip one evening to visit Leon’s family for dinner. I feel so lucky to have a best friend like him 🙂

We had dinner in Central City at a little Italian restaurant called Manzo’s.

I was so glad Leon got to spend time with his family!!
One morning for breakfast I ate a bowl of oatmeal! It was soooooo good! I have been on a peanut butter toast kick for lunch so I forgot how good oatmeal can be! I always make my oats like this: 1/4 C rolled oats, 1 C water, salt, cinnamon – cook on stove top until liquid is absorbed – add a splash of non-dairy milk, 1 scoop protein powder (I like cinnamon cookie batter @1stphorm ), 2 T flax seed – top with peanut butter, berries, & a dash of cacao

One night for dinner I had salad, a veggie burger, and a side of sweet potato fries! I LOVE cooking sweet potatoes in the air fryer. They always come out perfect!

I also made Rachael’s Good Eat’s TWIX BARS! These went FAST in my house – they were incredible!

I have also been reading this book with my sister! I LOVE it so far. It’s seriously like reading about my life. I am a total Martha. I also love that there is a little study guide for each chapter. I think this book would be great to read with a group of women in your life!

After a workout last Saturday morning, I got all cleaned up, made some toast, and headed to Louisville for the day to see some family! Pro tip: microwave your blueberries over your peanut butter…game changer.

Sunday was all about church, reading, laying by the pool, and then a graduation party for the sweet girl I have known since forever!!

I was PUMPED when my Good Sweat exercise equipment came in the mail. It’s going to make my workout’s more intense and I love that!

My mom made these AMAZING turkey burgers one night for dinner! I made more sweet potato fries, guacamole, and sliced up some pineapple to eat on the side. I LOVE these kinds of meals!

You guys!! My boyfriend got me this mug and I am OBSESSED!!!! I think it describes me so perfectly!!! 🙂 I showed him this a few weeks ago and we laughed at how accurate it was. And then he surprised me with it! He’s the best! I can’t wait to drink my coffee out of this at work since I feel like my enthusiasm really does scare people there!! LOL.

Leon and I also got to attend a pretty awesome fundraiser this week. We went to the 11th Annual Cooking for Hope put on by Hope House here in town. The event was awesome! If you are ever looking to volunteer or donate…definitely check Hope House out. You can read more about them HERE.
And that was my week!! I am off to get in a workout and pack a little bag to go to the lake tomorrow with Leon and his friends. Have a wonderful Memorial Day!!
