
Hello, hello, hello! Do you remember me? It’s been about a month since we last talked. I’m sorry, ok? Life has been so busy between work, school, relationships, and everything else. But hey, you know this, because I am sure you are busy too. Anywho, I am currently quarantined at home so what better opportunity to crank out a blog post? Here’s a little looksee into what I have been up to lately…
I’ve been going back to therapy. There is no shame in the mental health game. Talking to a therapist allows me to gain a better perspective on why I am feeling certain emotions. I tend to be a very highly anxious person and my mind automatically resorts to worst-case scenario rather than going with the flow or looking for the positives. I have to constantly work on being positive!


Since we last talked I have been to Madisonville twice to see my boyfriend’s family. They are always so welcoming and sweet to me! I don’t think I have ever clicked with a family (other than mine!) more. I can totally be myself around them and that is pretty dang awesome!

No surprise here, but Owen and I have been going on SO MANY walks. Walking is incredibly therapeutic for me. If I didn’t have other responsibilities, I would walk all day. I love to walk in the early mornings before work, during the day, after work…you name it, I’m walking it! Ever since I started walking 3-5 miles a day, I have noticed a huge difference in the way I feel. My mood is better, my clothes fit better, and I just all around feel great! I tend to have high cortisol so walking is perfect for that!

I was on a salad kick for a few days a while back. I LOVE cranberry goat cheese and I was putting that stuff on everything! The salad above had baby romaine, cranberry goat cheese, walnuts, cranberries, apples, and Tessemae’s honey poppyseed dressing. I like to add salmon too!


A few weeks ago I had to work a catering event in Nashville. How beautiful was their set-up?

I love hanging out with my best friend 🙂

One morning, Leon woke up and ran to IGA to get me my favorite Chaney’s Dairy Barn chocolate milk! Then, he made me french toast. He is a keeper 😉 French toast is one of my favorite’s and he is a PRO at making it!

For dinner one night I made us chicken and rice bowls with peppers, salsa, beans, and guacamole!
LOOK AT THESE TWO! They are besties 🙂 I don’t mind working from home when these two are around!

Another night, I made air fryer sweet potatoes with a veggie burger. So good! I like to coat my sweet potatoes in a drizzle of olive oil, salt, pepper, cinnamon, and paprika. I usually bake them at 400 for about 20 minutes in the air fryer.

Another trip to Madisonville! I love his niece and nephew as if they were my own family!!

Sunday was all about church! I am IN LOVE with headbands lately.

Can. You. Even! LOOK AT THAT FACE. He is so darn cute, it kills me!

One night for dinner my mom made fish and rice while I made asparagus and put together a salad. This dinner was incredible! This fish is one of my favorite dishes my mom makes. It is just wild caught orange roughy and marinara sauce baked in the oven.

I always look forward to when this guy gets off work! 🙂

I made a wrap for lunch the other day – it had chopped lettuce/cabbage, turkey, white cheddar cheese, and mustard. I dropped the entire wrap 2 seconds after this picture…so the dogs enjoyed most of it. I would have made another but this was the last tortilla! LOL. The carrots were amazing though. Freshly peeled and chopped carrots will forever top baby carrots!

And then after working on my computer for work, I snuggled up with a cup of coffee and read my book on the back porch yesterday evening.


It’s the simplest things that bring me so much joy. I hope you all have had a wonderful April so far! We’ve got some exciting things going on behind the scenes that I can’t wait to share with you all. Until next time 🙂
