Happy, happy Friday! …well, technically it’s Thursday night when I write this and I just know I won’t be able to keep my eyes open for much longer. So I can definitely say this post will go up tomorrow, on Friday 🙂 What have you been up to? How is your week? My weeks has been WONDERFUL! I love this weather. It is definitely a mood booster. Let’s jump all the way back to last week!
On Friday afternoon I did a workout followed by strawberry greek yogurt and 1/2 a peanut butter KIND bar. Later in the evening I enjoyed some popcorn and a Truly Lemonade in my PJ’s.
We ended the night with homemade pizzas! I love using the FlatOut wraps as the crust. I topped them all with pineapple, Canadian bacon, pepperoni, sauce, cheese, and basil!

I had to be up bright and early on Saturday to work a vaccine clinic for a few hours. I treated myself to Q coffee on the way there.

The rest of Saturday was spent enjoying time with my boyfriend. We ended the night with grilled burgers, mac n’ cheese, and our new favorite show – Queen of the South.

THEY TURNED OUT SO GOOD!
Sunday morning I was up super early to sip on some coffee and take Owen on a walk in the neighborhood.

For breakfast my mom made coffee cake, scrambled eggs, and sausage links. I was reading my Stephanie Plum novel and her mom made her this exact breakfast so I texted my mom the day before and said I had wanted the same thing! LOL.
And then I was off to teach Sunday school. Talk about sleepy eyes….

The rest of Sunday was spent doing homework! I had a bowl of oatmeal for lunch while Owen snoozed the day away.
A few hours later we had popcorn and M&M’s while watching our show.

For dinner we headed over to my parents house. We had brussels sprouts wrapped in bacon, chicken thighs, and this weird cheesy broccoli pasta thing I made…it looked gross but tasted pretty goof!

Monday morning I woke up super early to take Owen on a long walk before I had to head to another county for a vaccine clinic.

The weather could not have been anymore perfect. It was sunny and slightly chilly!

On my lunch break I headed out for another walk to loosen my legs and get some steps in!
For dinner on Monday night we had roasted potatoes, zucchini, and salmon. This meal was so good! We ended the night watching the Bachelor. I swear this show is way more fun when you watch it with others. I love my dads commentary making fun of it all. Haha!

Tuesday I was up early for another dog walk with Owen. I also did my devotional with some cofee.
I had a burst of energy after our walk so I went ahead and knocked out my workout. For breakfast I had a banana muffin and some scrambled eggs!
A few hours later I took a break from working and heated up leftovers for lunch.

After work I met my boyfriend at the dog park to let our dogs run and get some energy out. Watching Owen run around like crazy brings me so much JOY 🙂

After I finished my evening class we picked up Chipotle and watched our show! I left a few hours later to head home and get some sleep.

I had to be up super early for work this morning to travel to another county to give biometric screenings. I took some oatmeal with me to go and it ended up tasting amazing! I combined 1/4 C oats with 1 C of water until the oats started absorbing the liquid on the stove. After a few minutes I removed the oats from heat, added 1 T milled flax seed and 1/2 scoop protein powder. Then I topped it with blueberries and peanut butter 🙂

After I got home from work – I did a quick workout, ate a simple lunch, and then took Oslo to pick up my mom from work and run some errands. How cute is he?!

I snacked on popcorn and coffee while I read my book on the back porch later in the afternoon.

For dinner we had tuna steak, rice, carrots, and cucumber salad. Everything tasted delicious! A little later my cutest boyfriend picked me up for a quick ice cream date since I was too tired to drive and see him and he had some work / studying to do. I got a kid-sized scoop of Thin Mint and it hit the spot!! 🙂
WOW! I made it through this blog post!!! It’s 9:20 PM and I just can’t keep my eyes open any longer. Until next time sweet friends 🙂
