Good morning lovely people! Thank you for stopping by the blog today! I am so excited for the weekend – we are going to see my boyfriend’s family and I LOVE getting to spend time with them. Every time we have to go back to Bowling Green I cry! LOL. I just really enjoy getting to spend time with them and it makes me so happy to see how happy my boyfriend is when he is at home with his family 🙂
Before the weekend starts, I wanted to do a quick recap from this past week. Let’s remind to last Sunday! I woke up early, blogged, made muffins, and then relaxed for the rest of the morning.

I made a quick salad for lunch too! My salad had a few chicken nuggets, carrots, croutons, and spring mix all tossed in honey mustard vinaigrette and cottage cheese.

A little later in the evening my boyfriend came over and we went on a walk down to the creek. It was so beautiful in the snow!


For dinner I made us salmon and roasted sweet potatoes. I also had a glass of wine! We also finished our show, Longmire! I was so sad it ended. Have you seen it? What did you think of the ending? We really wanted to go in the hot tub after dinner but it ended up being stinky and slimy…apparently it hasn’t been treated properly with chemicals these last few weeks…LOL.

After he left and a super hot shower to scrub off the hot tub smell, I snuggled up in my room to watch The Mindy Project with these sleepy boys!

On Monday morning I was up bright and early! I made some oatmeal to take to work and packed the rest of my food for the day. You can get my Go-To Oatmeal recipe on the homepage of my blog!

For lunch I had leftover salmon, apples, carrots, cottage cheese, and croutons over spring mix and tossed in honey mustard vinaigrette. This was so tasty! I love salmon 🙂

My mom requested margaritas on Monday night and she didn’t even know it was National Margarita Day! We picked up ingredients to make our own homemade ones. Look at my cute little car companion!!

I made a really, really good homemade guacamole for everyone to munch on while I made the tacos. I like to just eye-ball when I make guacamole and 9 times out of 10 it comes out perfect! I sipped on one two many margs too!

The night ended with a cup of coffee and The Bachelor! Tuesday morning I woke up early to take Owen on a long dog walk because the weather was absolutely beautiful!! We couldn’t get enough. I ate 1/2 a protein bar to hold me over until breakfast.
After our walk, I settled into work and ate a quick breakfast. I had 2 egg + 1 egg white with an english muffin. The english muffin has peanut butter on one side and the other had butter and jelly.

Owen even got to go to the dog park with my boyfriend’s dogs because the weather was SO NICE!! He got so muddy but it was worth it. Look how happy he is 🙂 Owen is so cute at the dog park because he just goes up to each dog to greet them!!

After the dog park I had a yogurt with a scoop of peanut butter, cinnamon, banana chips, and chocolate chips.

A while later I had a night class so while the professor was giving his lecture I made my dinner. I was proud of this meal because my boyfriend basically has zero groceries! I found frozen broccoli, a frozen turkey burger, and some mac n’ cheese. I whipped it all up and made a great meal! All dipped in spicy hummus too 🙂


We ended our night watching Queen of the South! The next morning was gorgeous outside! I sipped on my coffee while enjoying the morning sunrise.


A little while later at work I had pumpkin waffles! For the waffles I used 1/2 scoop pumpkin spice protein powder, 1/4 Krusteaz protein waffle mix a water. I topped the waffles with PB, chocolate, syrup, and a sprinkle of flax.

After staring at the computer most of the morning, I went on a quick stroll to grab a cup of coffee!
I was having a GREAT day on Wednesday. Sunshine will do that for ya 🙂

When I got home I went on a 2 mile run with Owen and did an arm workout. After my workout I had some yogurt before logging on to my computer to meet one of my friends to work on homework.


After we got through some homework I showered off and headed downstairs for dinner. My mom made burgers and fries with spicy mayo and fried onions. I also had a sparkling water!
We ended the night watching a few episodes of Queen of the South. I woke up early on Thursday with coffee on my mind! They dogs LOVE whip cream!!! They are so cute.

For breakfast I had a few protein waffles with an egg and a piece of turkey sausage.

I headed home around noon and did a workout on my lunch break! For lunch I had a nice plate of taco leftovers!

After work, I took this little stinker on a long walk! HE IS SO CUTE AND FLUFFY. When we got back I just sat in the sunshine for a while, soaking it all in!
For dinner I headed over to my boyfriends house! I made us an enchilada skillet packed with veggies!! I’ll post the recipe soon 😉

And the night ended in my favorite way – with ice cream while watching Queen of the South all snuggled up on the couch! I hope you all have a WONDERFUL weekend!!
