Good morning lovely humans and Happy Saturday! I am currently snuggled up in bed with my little Owen, drinking coffee, and watching The Mindy Project. I haven’t watched this show in a while and I thought to myself, why not watch it for a 6th time?! LOL. If you don’t already know, I love to rotate between feel good shows. I like to have something funny and light playing in the background while I work, cook, or workout! I rotate between Friends, The Office, New Girl, Schitt’s Creek, and The Mindy Project. If I want to actually pay attention, I will turn on Gilmore Girls. I once read that people with high anxiety (ME!) like to re-watch the same shows because they know exactly what is going to happen… Lord, if that ain’t the truth…haha!

Anyways, lettuce catch up over the last few days! I am trying to blog more so please enjoy the random eats 🙂 One night my mom made lemon chicken spaghetti with side salad and bread. I am actually not a pasta person, at all. But I can get down with a little lemon pasta! I mostly just fill up on bread any time we eat pasta haha!
Wednesday we celebrated the life of my Juju (my mom’s dad!). We ate his favorite meal…pot roast! We also had a side salad and more bread. Gosh darn, I love bread! Memory Eternal to my Juju. An incredible and amazing man! He was in National Geographic once and he even has a mountain named after him in Antartica that he climbed!!! He was the type of man who would wander off into the woods for days with nothing but the clothes on his back (something I did not inherit!!). He also never missed a birthday. I think I got my love of writing from him. He kept a journal everyday since he was young boy! 🙂

I ended the night with my protein mug cake! I added PB2, light chocolate syrup, and a coconut cool whip.

One morning I made oats with flax, cinnamon, peanut butter, and Kerrygold butter. Here is how I made it: 1/3 C oats, 1 T flax, 2/3 C water, 1 T stevia sweetened brown sugar – heat on the stove until liquid is absorbed. Add in cinnamon, 1 T PB, and 1/2 T butter.

For dinner one night I decided to cook for my family! I made homemade guacamole from The Magnolia Cookbook. It was SO GOOD.

Luckily the guacamole was good because the tacos were so spicy we could barely get through them! I felt so bad that I ruined the taco meat. I didn’t realize I had purchased extra spicy taco seasoning…sorry family. Normally I love spicy foods but even this was too much!

I also got to make a trip to see my best friend!!!

First we got coffee and a little granola bar because look how dang cute it is!

We then got brunch. I forgot to snap a picture! I had a veggie omelet with a biscuit, hash browns, and bacon. He had biscuits and gravy! We then took a long walk together around the park.
After our walk we picked up desserts to make with his niece and nephews. We made brownies and decorated sugar cookies! I was in a sugar coma on the way home. His sister also made white chicken chili and his mom made cornbread…AKA the 2 ways to my heart, hahah!! They are the kindest people. I feel so lucky that I have a boyfriend whose family makes me feel so loved and welcome!
Luckily the sugar coma passed and I was able to wake up without a stomach ache. I sipped on some coffee while I did my morning bible study.

And look at my cute little blog helper this morning!!! Well, I am off to clean, workout, and go for a long walk! Talk later cutie patooties!
