
Happy Sunday pretty people! How was your week? Mine was WONDERFUL! Forrealz. I finally feel like my old self again. PMS symptoms + stress = not a happy Anastasia. Luckily, I’ve got a pretty awesome guy helping me become more stress free these days…

Last Monday he asked me if I wanted to go on a surprise date later in the week. I said HECK YES! So Wednesday after work, I got all dolled up! He showed up with the most beautiful flowers and opened my door and everything! Y’all…he also showed up covered in a little grease…I asked him why and he said he helped an older lady on the side of the road change their tire…IS HE A DREAM BOAT OR WHAT?!

We drove out to the Farmer and The Frenchman in Henderson, KY. I HIGHLY recommend. We had the best time! The weather was perfect and the food/wine was phenomenal!

It felt nice to escape Bowling Green for a little while. I finally felt like I could catch my breath, forget about work, and just enjoy the moment with a very special person.

Thursday night I made us breakfast for dinner! I made mini protein waffles, turkey bacon, and eggs!

These mini protein waffles have been my favorite! I just mix protein powder, almond milk, and Krusteaz protein waffle mix together.

Friday I went home from work around noon so I could work from home. I really needed to get out of the office and knock out some emails without any distractions! I enjoyed a nice cut-up quesadilla for lunch over some greens and an apple.

After I knocked some work out I went to WORKOUT, LOL. See what I did there? I did a killer leg workout that left my legs sore for DAYS.

I headed straight to the grocery store after to pick up some ingredients for dinner. I made us steak, potatoes, and asparagus…of course my favorite was the garlic bread and wine! I would happily eat bread for every meal. We spent the rest of the evening watching Justified!

Saturday I slept in a little before working some. Around noon I headed to a Farm-To-Table event in Franklin, TN.

These Farm-To-Tables are always my favorite! I get to hang out with some pretty cool people while getting to help prepare beautiful food. I always love getting to taste test the creations my friend makes. He is an EXCELLENT chef.


I went to bed with a full tummy and a happy heart! Sunday I spent the day working, browsing TJ Maxx, and finishing all of the homework I procrastinated. We also made a BOMB meal (do people still say bomb?!?). We marinated chicken thighs in spicy brown mustard and a smokey chipotle blend. Then we fried it in butter and ate it alongside some roasted veggies and the incredible cornbread he made 🙂

The night ended with leftover peach cobbler, coffee, and some peanut butter pretzel bites! There are few things I love more than coffee, good food, and even better company. I hope you all have an incredible week! I am off to learn what I can about this week’s Biostats lesson.
