This recipe is AMAZING and quite interesting. I am calling it “compost casserole” because I used up all the leftover produce in the fridge! It turns out, bok choy and eggs actually pair quite well together.
…how many times can I say “quite”…. quite a bit more actually.
Okie dokie folks…here is the recipe. Customize to your hearts desire! Happy Eating!
Compost Casserole
- 2 BOK CHOY
- 1/2 SWEET POTATO
- 1/2 RED ONION
- 2 TURKEY SLICES
- 2 SLICES of GOUDA
- 2 CLOVES GARLIC
- 8 EGGS
- 1 TBSP HOT SAUCE
- 1/2 C ALMOND MILK
- SPRINKLE OF THYME
- SALT & PEPPER
- TOP W/ RED PEPPER FLAKES
Preheat oven to 375. Spray 7×11 pan. Thinly slice sweet potatoes, top w/ diced 1/2 red onion, diced turkey slices, diced bok choy. Combine eggs, almond milk, garlic, hot sauce, & seasonings. Pour egg mixture of vegetables in the pan. Top w/ red pepper flakes & Gouda cheese broken into pieces. Cook for 45 minutes – an hour.
