Hello there cutie friends! I just got back from a 3 mile walk in the sunshine with Owen and I am feeling inspired to write. It was a darn good week if I do say so myself. I was sick for the last half of it but that’s alright 🙂
Monday I was feeling extra girly in this cute headband scarf from a sweet lady at my church. I loved it! I also loved these overnight oats I made for my roommate and I based on It Is Well With My Bowl’s recipe.
One night for dinner Rachel and I had roasted sweet potatoes, broccoli, and cauliflower. We also made steak and then sautéed kale and onions in the leftover steak grease! We also treated ourselves to some bread dipped in olive oil!! I LOVE dinners cooked at home. For the roasted veggies I followed this recipe: CLICK HERE. For the steak I just browned it on each side and seasoned it with coconut aminos.
The next night I roasted baby red potatoes at 425 for 30 minutes. I seasoned them with olive oil, salt, pepper, thyme, and truffle parmesan. For the pork chops, I marinated them in a honey balsamic dressing for an hour then pan fried them. For the kale salad I massaged the kale in 1 T of honey balsamic dressingand 1 tsp of olive oil. Then I added in half a diced, roasted sweet potato, one small diced roasted apple, and 1/2 a diced red onion that was roasted with the sweet potato and apple. Then I added in pecans and cranberries. It was SO GOOD!!!!!
It has been so rainy/cold/windy/cloudy this last week! I was SO THANKFUL for sunshine on Thursday! I had also gotten a head cold Tuesday so I was happy to finally feel slightly normal again.
Thursday night was so much fun! Rach and I went for coffee then decided we wanted beer and apps instead! So we headed to Mellow Mushroom for an early dinner. Then we got ready for the WKU game with her cutest parents!
We sipped on more beer and made it on the jumbo tron!!!! I may have danced. And it may have been hilariously horrible.
After drinks at the game we headed to Double Dogs with a friend for dinner 2! We all split some nachos and laughed for a good while. I was more than ready for bed when we got home.
Friday after work Rach and I got in a SUPER EXHAUSTING BUT SO WORTH IT workout. Then one of her sweet friends came over for margs, movies, and tacos!
And after one marg I was asleep by 10 🙂 A low-key Friday night is my favorite kind of night!
I was up early for Room-In-The-Inn at my church this morning and then I had coffee with my parents. I deep cleaned my room, got a load of laundry in, and worked on a project for school when I looked up and my roomie was bringing me coffee!!! I love her. Don’t deserve her. And would be lost without her.
