Hi! Happy Sunday! I am currently cozied up on my bed with Owen at my side while I watch The Mindy Project and type up this blog post. It’s been a weird weekend and I am glad tomorrow is Monday. Lettuce get started!
Last weekend was spent typing up my Pumpkin Spice Protein Bites, and working on homework. Lots of coffee was consumed, that’s for sure! I also enjoyed this super simple breakfast of a veggie, sausage, and egg scramble over arugula and leftover grain-free pumpkin cake.
After finishing up some homework I headed out on a long dog walk! Followed by this super tasty kombucha for little afternoon pick-me-up.
I was cuddling with Owen when Cutie Man FaceTimed me from the Almafi Coast. We chatted for a bit about his travels and my constant schoolwork struggles and then he was off!
Monday I woke up for a workout before getting ready for my two different jobs. In between jobs I chowed down on this salad combo that I have been LOVING lately! Arugula, avocado, spicy brown mustard, carrots, pickles, and grass-fed pepperonis!
I took Owen on a quick walk when I got home that evening and then we spent some time snuggling and watching The Mindy Project 🙂 I can’t handle his cuteness!
Tuesday and Wednesday involved working out, work, and going to bed early! I forgot to snap one single picture!
Thursday I got home from a midterm around 1:00 and ate some arugula with ground turkey and avocado ranch.
Friday morning I ate some unsweetened coconut milk yogurt with chocolate plant protein powder and white chocolate macadamia nut granola. I have been loving this combo for breakfast! It’s like breakfast for dessert!
The rest of Friday was spent at work followed by Owen’s vet appointment. I took a quick power nap before getting ready to go out with my friends that night. Although Friday night was fun, Saturday morning WAS NOT. I woke up at 4:00 a.m. to the stomach bug. I know you must be thinking, “are you sure you weren’t hungover?” My answer – I am POSITIVE. I was puking all day!! My mom found this simple trick of taking a tablespoon of canned peach syrup every 15 minutes to help stop vomiting. This worked like a charm! I was finally able to keep down crackers and gatorade around 4:00 p.m.
This morning (Sunday!) I FINALLY felt better. I took all of my fruits, veggies, berries, and omegas alongside some Immunity Defense capsules and a B12 supplement. I needed all the nutrients I could get.
I drank a cup of coffee while working on homework for class! I decided to skip church in hopes to avoid getting anyone sick. I also had a ton of work to make up for since I couldn’t do anything on Saturday.
A few hours later I made some oatmeal to settle my stomach. I used this recipe: CLICK HERE.
A little while later I tried to eat this salad…but I couldn’t. My stomach could NOT handle it so I just ate the crackers.
Luckily around 5:30 my stomach was better and I was starving for dinner! Roasted potatoes, onions, squash, and a turnips alongside roasted pork loin with maple mustard and apples. SOOOO GOOOOD!!!!
