It’s no secret oatmeal might just be my favorite food group. Yes…I am claiming it to be it’s own food group. I had a friend reach out to me asking for an oatmeal recipe so I thought it would be nice to post my go-to recipe these days. This recipe takes less than 10 minutes on the stove because duh, oatmeal should NEVER be microwaved (#blasphemy). You can add any toppings you want! I use 1/3 C of oats since I found 1/2 C makes me feel over stuffed. Adjust how you like!
My Go-To Oatmeal Recipe (Serves 1):
- 1/3 C Bob’s Red Mill thick rolled oats
- 1 T unsweetened coconut shreds
- 1/3 C water
- 1/3 C unsweetened almond milk
- 5 drops of stevia (I like chocolate!)
- 1/2 tsp cinnamon
- sprinkle of sea salt*
Combine all of the ingredients in a small pot over medium-heat. Stir occasionally until all liquid is absorbed. Usually takes 5-8 minutes.
*The sea salt brings out the flavor of the oats! Don’t skip this!!
Top with whatever your pretty little heart desires – mine usually craves banana, chocolate, and a big ol’ spoonful of peanut butter!
