Random dinners, Paloma’s, & a New Job!

Hiya!!!! How are you?? It’s a sleepy, Saturday morning and I was itching to write a blog post this morning. It’s been a long week, but a good one for sure. Lettuce get started!

I used to eat plain coconut milk yogurt with protein powder ALL THE TIME, but then I took a hiatus. I picked some up at the store this week and have been back to eating it. I forgot how much it tastes like pudding! The picture below is: 1 C unsweetened coconut milk yogurt, 1 scoop chocolate protein powder, a few strawberries, and a handful of dark chocolate KIND granola.


Here’s my little cuddle bug….LOOK HOW HE’S HUGGING MY ARM. I can’t even.


Usually in the evenings I cook dinner for my family since I am the first one home. We’ve been getting the Blue Apron meals for a few years now and they make cooking dinner so much easier. When I lived by myself, I usually ate roasted vegetables and a veggie burger EVERY NIGHT. So, it’s fun getting to experiment with different ingredients and food!


There is nothing quite like coming home to a free box of goodies from your favorite pasta company. Thanks Banza 🙂


With this being the first official week of my new job, alcohol was involved almost every night as I cooked dinner. I needed a pick-me-up. I have been on a Paloma kick lately and they are so refreshing!
Serves 1:
-1/2 grapefruit, juiced
-1/2 lime, juiced
-splash of tequila
-1 can of grapefruit sparkling water


One night I put chicken in the pressure cooker for 40 minutes, shredded it, and then mixed it with BBQ sauce. I also made roasted potatoes on the side!


I got home late one night from church and had the house to myself! I made a veggie scramble and avocado toast. For the egg scramble I sautéed a few mushrooms and bell peppers on the stove and then added in 1 egg + 1 egg white.


One day at work I had to present on my program. I love my new job 🙂


I got home from work one day around 2 and hadn’t eaten lunch yet. This smoothie did NOT disappoint.
🍑🥭PEACHY-MANGO MILKSHAKE🥭🍑 1/2 fresh peach, handful frozen peaches, ice, 1 scoop plant based vanilla protein powder, dash of cinnamon, 1/2 C almond milk.


I have been topping almost everything with this nut butter lately. It tastes like frosting!!!!

And last but not least, I enjoyed this bowl of oatmeal before work yesterday morning. It’s super simple! I haven’t had oatmeal in forever and this hit the spot!
-1/4 C oats
-1/2 C almond milk
-1/2 C water
Heat on the stove until water is absorbed!
Add in 1 scoop vanilla plant protein, almond butter, coconut, and 1/2 a peach!
