I’ve had a craving for white chocolate macadamia nut cookies for MONTHS and I finally squashed that craving. Do you remember those Subway macadamia nut cookies?! I LOVED those things when I was growing up.
However, I try not hit up Subway for cookies anymore. I like creating my own “healthier” version now.
These mini cookies have just the right amount of sweetness and the perfect texture! I enjoyed a few (or five…) with my afternoon coffee. I wish I could tell you exactly how many the dough makes…but I ate half the batter in the process. Sorry not sorry.
White Chocolate Macadamia Nut Cookies (GF)
- 2 eggs
- 1 tsp vanilla
- 1/2 C maple syrup
- 1/2 C coconut butter, melted*
- 1/2 C coconut flour
- 1/4 C tapioca flour
- 1/2 tsp baking soda
- sprinkle sea salt
- 1/4 C GF white chocolate chips
- 1/4 C macadamia nuts, crushed
Preheat oven to 350. Whisk eggs. Add in vanilla, maple syrup, and coconut butter. Add in coconut flour, tapioca flour, baking soda and salt. Stir together. Stir in white chocolate chips and macadamia nuts. Roll into mini – bites.
Bake for 8-10 minutes.

*Keep in mind coconut butter is NOT the same as coconut oil! Two totally different things.
