Hi friend!! I’ve got an easy recipe for you today. This quinoa salad is simple, healthy, and the perfect side dish to all your Summer BBQ’s! It also makes a great salad to meal prep on Sunday and eat throughout the week.
I love salads that actually keep my FULL and let me tell you, this one does just the trick! I recommend eating chips on the salad but it packs enough flavor to eat straight on it’s own. 🙂
Mexican Quinoa Salad
- 1 C quinoa
- 1 C water
- 1 can organic black beans
- 2 C frozen corn, thawed
- 1 C cherry tomatoes, sliced
- 1 bunch cilantro, chopped
- 1 bunch of green onion, chopped
- Juice of 2 limes
- 2 avocados, diced
- 1 tsp chili powder
- 1/4 tsp cayenne pepper
- salt to taste
Bring 1 C of quinoa to boil with 1 C of water with a sprinkle of salt, then reduce to a simmer for 15 – 20 mins. While the quinoa is cooking rinse and drain beans. In a large bowl combine the beans, corn, tomatoes, cilantro, and green onion. Once the quinoa is done, add it in! Then add juice of the limes, chili powder, and cayenne pepper. Add as much salt as you like!
