Hi there! Ya know, I thought summer time would mean lots of blogging and catching up on my favorite blogs…but it’s been anything but that. This summer has already been a lot busier than I expected but I don’t mind! It’s been the good kind of busy. However, just because I’m busy doesn’t mean I am sacrificing my health – I hope this recap inspires you to eat healthy even in the busiest seasons of life. π
Since it’s been a hot minutes since my last recap…I will do my best to try and remember what days I ate what. Lettuce start with the salad below, I believe it was two Thursday’s ago? So, May 16th!
This salad has spring mix, spinach, roasted sweet potatoes / carrots, and za’atar chicken. I love using the Organic Girl Green Goddess dressing too!
Friday morning I had a big smoothie bowl: 1 scoop chocolate plant protein, 1/2 C frozen cherries, 1/4 frozen banana, 1 C unsweetened almond milk – blend and top with peanut butter & dairy-free chocolate chips.
Friday also included lots and lots of coffee? Do you remember when I said I was going to cut back on coffee? That last 1 day….hahahaha I also got to spend time with one of my favorite humans on Friday! Hi Naomi π <3
After spending time with Naomi and going into work, I came home to workout and put together a salad for dinner while watching movies. Crazy Friday night! Hah!
This salad has: spring mix, Greek chicken, cucumbers, feta, couscous, avocado, roasted red peppers, and tzatziki sauce.
I was also waiting on one of my friends to come through town! My house was hit pitstop on his way to Chicago and I am so glad I got to spend some time with him!
Saturday included working out, birthday parties, and movies with my brother. π
Sunday I really channeled my inner grandma with my outfit choice – I got everything at Goodwill. I secretly love this outfit!
Can’t forget about my daily dose of 30+ veggies π
I also had the biggest toast craving! Sourdough toast with 1/4 avocado mashed with seat salt, pepper, and lime topped with an egg. The other combo was the class peanut butter and banana!
The rest of Sunday was spent at my sweet friend Mandy’s house enjoying steak salads, wine in the hot tub, and an episode of the Kardashians before picking my parent’s up at the airport around 1 in the morning.
Monday morning I woke up (SUPER SLEEPY) to do some quiet time before making some oatmeal on my way to work.
Oatmeal: 1/4 C oatmeal, 1/2 C water, 5 drops chocolate stevia – cooked until liquid is absorbed. Topped with 1/4 banana, a chocolate protein bite, chocolate chips and peanut butter.
After going into work for a little while, I came home to workout, shower, and settle down with a hot cup of tea. Plus Owen snuggles. <3
Tuesday morning I mixed leftover roasted sweet potatoes/carrots with an egg and topped it with a little mustard and 1/4 of an avocado. I also had half a gluten-free everything bagel with some ghee on it.

I can’t remember what I did Wednesday so let’s jump to Thursday! I spent the day at work and then I headed to my dear friend’s Katie and Daniel’s house for a sleepover! They have three little girls (one of which is my God Daughter!) so I was able to hang out with them all Thursday evening and Friday morning. They are the sweetest family and I am so grateful for them! Friday when I got home I decided to make PB&Chocolate protein bites and blog about them. You can find the recipe HERE.

Friday evening I enjoyed a few beers on the back porch with my mom while my dad grilled some hamburgers for us!

I went to bed with an incredibly full tummy and a happy heart. I love spending time with my family.
Saturday morning I woke up extra early to drink coffee and read for a while. I took Owen on a super long walk, did a workout, and then made some lunch. I tried sardines for the first time and I have to say I am a fan! They tasted like a mix between tuna and salmon. I also had leftover Whole30 chicken salad.

Later in the afternoon I got ready for a date with my sister! She surprised me with Aly & AJ tickets for a graduation present we had plans to go to that and go to dinner.

We had sushi and it was wonderful!! I had been craving sushi for so long. The concert was also amazing! My sister and I have loved Aly & AJ ever since we were kids.
We got back late Saturday night and I was exhausted.
Sunday morning was the usual church routine and then I ran some errands with my parents. When we got back home I made a version of a Bloody Mary for my mom and I. This had a pear, granny smith apple, lime, carrots, and vodka! It was so refreshing!

I also had a team call!! I love getting to work with the prettiest and kindest people!

For dinner that night we had lemon chicken salads – I love salads in the summer!!

On Memorial Day I woke up and drank some coffee while doing my morning quiet time. I also whipped up some simple and light pancakes.
Pancakes: 1 ripe banana (mashed), 1 egg + 1 egg white, cinnamon, 1 T coconut flour – all mixed together and cooked on a skillet like a normal pancake! I topped mine with sunflower seed butter, a drizzle of maple syrup, and blueberries.

And then I got ready for a day in Nashville with one cute fella!

Tuesday morning I woke up super sleepy but I still spent the morning with Jesus (and Owen!) I also got this mini card with my Juice Plus+ order and I love it. Good energy has been flowing all around me lately!
I had the day off from work so Owen and I went on a walk, I did a workout, cleaned a little, and then colored (LOL). I also had a simple salad with chips and guac for lunch.
And then I made dinner for my family! I made chickpea pasta with a meat sauce and a Caesar salad!

Gosh, everything you eat always sounds & looks sooo darn tasty. Your “grandma” outfit is seriously an everyday thing for me lol, I could mix & match my skirts & sweaters like that for days. π Your headband in that photo showing off your juice shirt is gorgeous, too!
